My local health food store has a "mock chicken salad" that I find very tasty. I've asked them for preparation hints, but they won't divulge. I mainly want to know how to get the tofu to have the correct texture (do I freeze first?), so that it absorbs flavor and doesn't crumble. Here's a list of ingredients from the label...
Organic tofu, celery, red onion, veganaise, nutritional yeast, safflower oil, soy sauce, & spike.
