My local health food store has a "mock chicken salad" that I find very tasty. I've asked them for preparation hints, but they won't divulge. I mainly want to know how to get the tofu to have the correct texture (do I freeze first?), so that it absorbs flavor and doesn't crumble. Here's a list of ingredients from the label...

Organic tofu, celery, red onion, veganaise, nutritional yeast, safflower oil, soy sauce, & spike.

Yes, freezing it, defrosting it, and pressing the water out will give it a much firmer texture and let it soak up any flavors. I've tried doing that with a Chinese "chicken" stir fry and it came out great.

By the way, your health food store sounds lovely-I can actually pronounce all the ingredients of the salad.

Tofu Mock Chicken Salad

Ingredients

block of frozen tofu, thawed and squeezed out
chopped celery
chopped onion
chopped pickles
vegan mayonnaise (I use egg-free)
salt and pepper to taste
poultry seasoning (found in grocery store; its a combination of sage, thyme, marjorom, etc.)

Directions:

Tear tofu into small shredded pieces. Add crunchy things (ie, celery, onions, pickles) as desired. Moisten with Mayonnaise to hold mitxture together. Season to taste with salt, pepper, poultry seasoning. Tamari can also be added.

Serve as dip or as a sandwich filling.

I put tips for freezing and pressing tofu in my profile. Vegenaise is vegan mayo, and Spike is a seasoning mix.

You do want to crumble or mash your tofu as part of preparation.

i know this isn't the answer to your question but definately try adding curry and raisins and perhaps some chopped walnuts to your chickenless salad for a more exotic taste :-)

This makes no sense to me as a vegetarian, if you is going to eat vegetarian just go vegetarian all the way don't pretend.
