Just wondering - does chipati, paratha and dahl have and animal products in them - milk, yoghurt, eggs, butter etc?

They might contain butter. Butter and ghee (clarified butter) are common ingredients in Indian cooking.

Chapati is basically flour and water and maybe some kind of oil.

Paratha is Chapati with added spice and vegetables, it's likely to be more oily than a typical Chapati.

Daal might have yogurt added, but usually not--it just depends on the recipe.

Eggs are considered "non-veg" by most Indians; if the person eats eggs, they probably eat meat as well. That's not always true, but it appears to be true most of the time. Indian vegetarians generally eat dairy products but not eggs. If an Indian restaurant item contained eggs it would probably be announced in the name of the dish; "Egg curry" etc., because a lot of Indians don't want to eat eggs.

Anytime I am eating Indian, I always inquire whether the restaurant cooks with oil or ghee (a special clarifed butter.) They will always tell you, and it saves hassle. As far as chapati, paratha, and dahl specifically, I'd say the one you need to be most cautious about is the paratha. The other two tend to be vegan, but paratha is a fried bread, and the traditional way to fry it is in ghee. I'd expect most restaurants to fry them in oil, though, if you request it ahead of time. I think the other answers are all accurate actually. It is always best to the ask in restaurant if they have ghee (melted butter) in their dishes served. Dhal and Chapati are vegan in most places, but paratha usually has some diary product in it.
Of course, if you want to make it at home, you can make all these in a very vegan fashion.
Any dishes that have paneer (home made cottage cheese) and makhani (butter) is something you would want to avoid if you are a vegan. For me personally, Raita (yogurt side) is always the hardest to pass... Though recently I saw a recipe somewhere to make raita with tofu....

They may have ghee, or clarified butter, but often don't.

Dal may be served with yogurt on top or on the side but I don't think that they mix it in. Paratha is usually just stuffed with potatoes or vegetables but you may want to ask just to be certain.

Naan is what will likely have butter, yoghurt and eggs mixed in.
