I have 75 pounds to lose and I need to start cooking differently all together. Right now we do the family food thing...sloppy joes, hamburger helper, hamburgers, hot dogs,chicken fingers, spaghetti, corn dogs, etc...just a few of the many things we rotate in our household. So I am looking to cut this out and cook healthier. Where to start? I'm sure I can cook healthy, but I don't have any ideas of what. It needs to be cheap (strict budget due to military income) and very child friendly. Nothing crazy or fancy expensive that takes hours to make. I worry about just how many times I can rotate chicken without us getting sick of it. Someone once recommended eating not too much differently than we do now, just eating less and substituting the fried and oils. I know my problem areas and that I need to substitute the sodas and sweets in our home also. So anyways, can someone help me get some ideas on some realistic, healthy menus? Thanks!

I bought two eggplant from the local farmer's market. They are succulent suckers. I cooked one with just salt, evoo, and garlic and it wasn't as good as I expected. What am I doing wrong or what should I make with the remaining one? No, eggplant parm, please. Thanks!

i want to make that recipe from the food network and rachel ray because every restaurant i've been to, i've always loved penne ala vodka. i'm going to attempt to make it but there are so many types of vodkas that all taste different. would buying a bottle of cheap vodka, aka Big Vod, like McCormick vodka be sufficient or is she talking Absolut ****? I got a deep fryer for making fish and chips. Potatoes cook at a hotter temp than fish and it takes a while for the oil to cool down. I have tried putting chips (not skinny fries, but sliced "chip" shaped potatoes in the microwave on "hold warm" in a bowl lined and covered with paper towels, but they get soggy/tough.
The fish cooks at 280 degrees for 8 mins and the potatoes at 340 degrees for 10 mins plus 2 more.
I can do the fish first, it would speed things up (oil heats faster than it cools) but still the fish would need to sit for 12-15 minutes before the potatoes are done.
What is the best way to keep fried food hot and crispy? And would you do the fish or potatoes first?
The oil is not fishy, this is fresh caught Ling Cod, that was frozen in fillets within 1 hour of catching them. So I think I could do either first....
Please hurry, dinner is in about 2 hours!

Is it easier to do it in plastic containers for freezing or shelf-store them in mason jars? HELP! This is my first year doing anything with tomato gardeing.
