i got one...tried this one night and it turned out YUUMMY.
OK- get a casserole dish. Cut up some onions and some garlic-big or little chunks, whatever you like. Add carrots, potatoes, broccolli, squash...ANYthing you like. Cut them somewhat evenly so they cook the same. Throw them in the dish with the onions and garlic. Sprinkle salt, pepper and garlic powder on top. I usually put a few pats of butter on top or some olive oil spray. Cover with foil. Bake at like 350 until they are done...maybe a little less than an hour. sooo yummy. i used carrots potatoes and butternut squash last time. yuuumO!!! oh and you can remove the foil after like a half hour so they get a little crispy on top ;0)

I love all vegetables except okra, but my favorites are Asparagus steamed Artichokes also steamed and then broccoli or cauliflower or peas and carrots I love beets and have some I need to cook up and anything roasted in the oven or on the grill is even better I think right now asparagus is so good and thin I am making some today again!

Hands down .....you cannot beat roasted vegetables.
- Just chop roughly your choice of vegetables. I like red peppers, zucchini, eggplant, sweet potato, squash, red onion etc.
- Put some whole garlic pegs. Do not peel them, they will roast in their skins. Trust me it will smell amazing.
- Drizzle a little olive oil on them and take your hands and mix it in, make sure the veggies are coated.
- Sprinkle some sea salt and fresh ground pepper. I also like a little fresh rosemary mixed in as well. But you can also try herbs de Provence as well.
Roast for about 45 mins at about 375 degrees.

I don't eat many veggies, but I know that steaming them is the best way to go. Preserves the flavor and structure of the said veggie.

Steaming is the best, but i also like to put them on the stove with a little olive oil and seasoning, like fresh garlic and parsley, works great with carrots and zucchini.

Steam them. That way most of the nutrients stay in the vegs instead of being boiled out in too much water. Raw is the ideal way to eat vegs for the best nutritional value.

Steaming is the best, it preserves colour & nutrition.
Alternative is roasting, in the oven or on the grill.
You have to brush them with a little oil though.
Avoid the really starchy ones, like potatoes.

I like to grill eggplant brushed with olive oil on the george foreman grill. You can use any of your favorite flavorings such as seasoned salt, pepper or lemon pepper. The foreman grill also grills squash well. Yummmmmmmmm!!!!

Stir fry. No calorie cooking spray in the pan, a little crushed garlic, and some worchestershire sauce or soy sauce, and they're done it minutes.
