Are you buying them whole, and then cutting them up & cooking them? I have a cookbook called "I Hear America Cooking" or something like that.. and a recipe from an old lady..was that she parboiled her greens.. she cooked them for a bit in water..drained that water..and then cooked them in water again.. but what I do is I buy the bags of pre-cut and washed field greens (mixed 4 or 5 types of greens),a nd cut up seasoning bacon, into 1" chunks, cook that until done, DONT drain grease, and then dump in greens (or if I buy loose greens, roll up greens, cut into strips, but take out stems) and then put into pot.. cover & let them cook down for a bit in there.. nd then toss in some hot sauce.. and let it cook for a while. The cookbook also says summer greens take longer to cook than winter greens, and that a freeze or two will make the greens "sweeter".

Add raw honey if you can get it..this is someone that raises honey bees, so much better than store, but you could use that as well. sometimes it takes a while for some to get used to the taste.try a small amount a day and build up the amount each day. you will get there..Also experiment with the green tea mixtures(green tea/honey bags those sorts)sometimes you can add some half in half,(milk) until you are used to drinking it plain....Don't quit,I am sure it will be worth it. I have been drinking all flavors of herb teas for years, love them..would not recommend packet sweetners, real sugar is much better in small amounts..you want the tea, not all the additives.. Enjoy!!

Not sure how your cooking them currently, or if your using fresh or frozen, but in either case.. Traditional greens are cooked for long period of time, using fat back or salt pork, or you can use bacon or other flavorful meat of your choice. Add a little sugar to help remove any bitterness. And steep and stir all day till greens get reduced. Server it with some vinegar and hot sauce.

Greens are great when sauteed or steamed with a generous amount of real butter and salt pork or ham hocks. Season with fresh ground black pepper. You shouldn't need salt as the pork and butter should provide plenty. A tasty condiment for serving greens is Trappeys vinegar which is a small bottle of vinegar infused with the green chili peppers that are in the bottle. (There are many brands available).

i cook mine w/ a bit of sauteed onion, as much or as little as you like to taste, add a smoked meat (preferably a hamhock but you can use turkey legs or wings) cooked low and slow b4 adding the greens and just a little fresh ground nutmeg about 1/8 to 1/4 teaspoon .

If you want a healthy meat options use smoke turkey. If you want not use meat do a type of sauteed with onions, pepper, salt and a little sugar on both options if you don't like a bitter green.

After you saute them in a little butter or oil (garlic is optional), sprinkle a little red wine vinegar or balsamic vinegar on them. It really brings out their flavor. Also make sure you use them while they're fresh!

I always use onions, salt, pepper, vinegar and smoke turkey or smoke neck bones (if you eat pork). Everyone in Georgia loves my greens.

in my family after we cook them we put salt and vinegar...i prefer it without the vinegar but everyone else in my family seems to like that taste...i just like the salt and butter...but i agree with the other answers garlic sounds like a good idea also
