I need a recipe for a healthy main course and healthy dessert and beverage for a school project

Healthy seniors that don't have specific dietary restrictions enjoy the same healthy meals that all of us should (notice I said should, not that we do!).

So a nice beef stew with dumplings and a salad for the main course, then fresh fruit with a little sugar and a snickerdoodle cookie for dessert. For beverages, offer coffee, tea and milk and I'd say you're set.

STEAMED BLUE CRABS

1 dozen live blue crabs
1 cup white vinegar
1 cup beer
3 tablespoons kosher salt
1 clove minced garlic
1 bay leaf
3/4 tablespoon Old Bay Seasoning or crab boil

Combine liquid ingredients with seasonings. In a large stockpot with a lid, place half of the crabs on the bottom; pour on half of the vinegar mixture. Add remaining crabs and liquid.
Cover and steam until crabs become bright red, about 20-25 minutes.

Serves 4.


ANGEL BERRY CAKE

1 (10 inch) Angel Food cake
10 oz. pkg. strawberries, partially thawed
2 c. whipping cream
1/4 c. sugar
1 tsp. vanilla
6 drops red food color (optional)

With knife, make slits at 1 inch intervals around top of cake between center and rim, cutting through cake from top to bottom. Insert strawberries into slits. Spoon juice over berries. Whip cream with vanilla, sugar and food color. Frost entire cake. Refrigerate 2-3 hours.

SUNSHINE PUNCH

6 oranges
6 lemons
1 lb. can pineapple juice
1 small bottle maraschino cherries
2 quarts sparkling white grape juice

Make a large block of ice, using an empty fruit juice carton or some similar container, the night before.
Squeeze the oranges and lemons to obtain juice, discarding seeds.

Place fruit juices and cherries in a punch bowl over the block of ice.

If this is to be used for a picnic, a large insulated Thermos container can be used instead of a punch bowl. Fill a pre-chilled Thermos 1/4 of the way with regular ice.

My husband and I are seniors and we often buy lunch at the senior center. They always serve one meat or fish, one vegetable, one starch (potatoes/rice/corn).

Desserts on different days:
Fruit cup
or Brownie size piece of cake (all types)
or Brownies
or Apple crisp - brownie size
or Peach cobbler - brownie size
or Dixie Cup ice cream

Tea, 1% milk, 2% milk, or water.

fruits and vegies melted cheese on top of all greens are good and just alittle sugar spinkled on top of strawberries.

always lots of water fruit juices
