I was thinking of making some brown gravy with mushrooms... and put the steak and gravy over bread.

Any other ideas?

Your idea sounds good, like an open faced roast beef sandwich with really good beef! Or fajitas or a caesar salad topped with the steak. I think your idea sounds best!

(How did you end up with leftover steak? We never have any left if my nephew is here!)

If you're feeling adventurous, you might try an English dish called 'Toad-in-the-Hole'. Don't worry, it has nothing to do with amphibians!

Make a recipe's worth of Yorkshire Pudding batter, and let it sit overnight. The next day, melt some lard or unsalted butter in a largish baking pan about 2" deep. When that has melted, pour in half the batter, and set it to bake at about 350 degrees. While the batter is setting, slice the leftover steak into thin slices. Once the batter is set, take the pan out of the oven, distribute the sliced meat in the pan, pour the rest of the batter over the meat, and return the pan to the oven. Allow it to bake for another 25 to 30 minutes, until the batter puffs up into hills and valleys. Take it out of the oven, cut it into squares, and serve immediately with gravy. (Like a souffle, it will tend to 'fall' if you wait too long before serving.)

BTW, you should see little bits of meat sticking out through the batter, looking much like toads looking out of their dens, hence the name.

Cut the leftover steak into strips and use it in an oriental stir fry!

Stir fry. Omelets. Sandwiches. Sliced thin over a good salad. You name it...you can do it with cold steak.

Same idea, before I read the rest of the question.

Cut into thin strips, add in veggies and mexican spices.
Microwave it together.

Slump on Dijon Mustard after heating it up.
OJ as the drink!

Slice them up, fry them with mushrooms, then add gravy. I do it a lot.

chop then slowly reheat your steak meat with some salsa
i always like to add fresh chopped onions and lime juice to the meat mixture
