I have some mashed potatoes leftover. Should I throw them away or make another meal with them?

Any ideas?

Mom used to fry some onion and bacon, crumble the bacon up and mix the onion and bacon into the mashed potatoes, and heat them in the oven. Yum!

Mix the mashed potato with onion. Add some scallions, egg, and salt and pepper.

Heat a griddle or non-stick pan and coat with a thin film of vegetable oil. Take about 2 tablespoons of the potato mixture in the palm of your hand and flatten as best you can. Place the potato mixture on the griddle, flatten with a large spatula, and fry for a few minutes until golden. Flip the pancake over and brown the other side. Remove to paper towels to drain. Serve immediately. You can also freeze the potato pancakes and crisp them up in a 350-degree oven at a later time.

Mashed Potato Candy
(does not work well if you made garlicy/spicey taters)

1/2 cup mashed potato
up to 2 lbs of 10x (icing) sugar depending how wet the mashed are
peanut butter - smooth/creamy works better

Work 10x sugar into the potatoes until you get a texture like modeling clay and it is dry enough to roll out with a rolling pin.
Roll out on a board dusted with more 10x sugar until you get a rectangle about 1/8 inch thick. Size of rectangle doesn't really matter.

Spread rectangle generously with peanut butter. Should cover dough base thoroughly but not be so thick that all it does is squish out when you roll up the dough.

Roll up from long side into a log. Chill for an hour in the frig in plastic wrap or wax paper or foil (whatever your preference is). Once cold.. remove from wrap and slice into pinwheels. Store covered in the frig (so they don't get sour) and Enjoy!!

of course I don't know how much you have left, but potato pancakes are best made with leftover mashed potatoes.
Easy to make and quick to fry in a small amount of oil.
Combine potatoes, 2 Tbsps. butter, white pepper and a beaten egg. Mix well then form into small, 3" patties, 1/2" think and coat with flour, shaking off the excess.
Place into hot oil in medium skillet over medium heat and cook until brown, carefully turning over with a wide spatula. Cook until bottom is crispy and serve with fresh chives, along with applesauce and/or sour cream.

i use them for breakfast. fry them with a little olive oil and garlic powder. let them stay frying on one side tho for a while so it gets crispy, then turn and do the other side soooooo good! or you can make shepards pie. Just fry up some ground beef/turkey w. salt n pepper. In a casserole dish, put the meat on the bottom, then a can of corn, then the mashed potatoes. Put a few pieces of butter on top with some garlic powder and pepper. Bake at 350 for....like an hour, or until the top gets crispy. YUM ;o)

Lazy Cottage Pie =)

Brown up some ground beef, add peppers,onions,carrots, a little brown gravy and anything else you like put it in a casserole dish.

Cover with aluminum foil and bake on 350F for about 45 min. or until the veggies are soft.

Remove the foil and add the Mashed potatoes all across the top and put it back in the oven for about 15 min. or until the top of the potatoes are a little brown.

Make "bubble and squeak"...saute some chopped onions and left-over veg in a bit of butter-cooked shredded cabbage is traditional,but you could use anything you have. When soft add the mashed potato and continue to cook on low heat-season well with salt and plenty of freshly ground pepper. This is real English comfort food!

You could make short-cut perogies. Add sauteed mushrooms & onions (& shredded cheese, if you like) to the taters, place about 1 tbl of filling into a won ton skin, seal edges & fry. Serve w sour cream & sauteed onions.

Potato Puffs

Vegetable spray
6 eggs, separated
3 cups warm mashed potatoes
3 tbsp chopped fresh parsley
2 tbsp finely chopped onion
Salt and pepper, to taste

Spray six ramekins or oven-proof bowls with vegetable spray; set aside. Beat egg yolks; blend in mashed potatoes, parsley and onion. Add salt and pepper. Beat egg whites until stiff but not dry. Fold into potato mixture. Spoon mixture into prepared ramekins. Bake at 375F for 20 to 25 minutes or until golden brown.

For a change of taste, stir 1 can salmon or tuna, drained and chopped or 1-1/2 cups chopped cooked chicken into mashed potato mixture before folding in beaten egg whites.

Save the tates. In the morning, you make little cakes out of your leftover potato mashings. Then you throw them in a skillet with hot butter. Just brown em, flip em, eat em with eggs and a cold Bud Light.

You can mix them with raw ground beef, diced onions, ground black pepper, an onion, and bread crumbs. Shape into balls, fry in a little oil until browned on the outside and then bake 20 minutes in a 350º oven and serve with whatever kind of sauce you'd like for some wonderful meatballs. You can use spaghetti sauce or sweet and sour sauce or BBQ sauce or even take 1/4 c white vinegar and a 7 oz jar of raspberry preserves - pour the two into a pan, mix, and bring to a boil and then drop the meatballs in it for a very nice Sweet/Sour sauce.
