I bought two eggplant from the local farmer's market. They are succulent suckers. I cooked one with just salt, evoo, and garlic and it wasn't as good as I expected. What am I doing wrong or what should I make with the remaining one? No, eggplant parm, please. Thanks!

Awesome...I just answered a question llike this, but I will let you know too what I like:
Eggplant brushed with olive oil and your favorite seasoning. I wouldn't recommend just salt as a seasoning to your eggplant. Try seasoned salt and pepper or just lemon pepper. Garlic is always a good accent to the eggplant as well. Experiment...you'll find out there are so many spices you can add to eggplant that will make it taste scrumptious!!!

Stuffed Eggplant
Cut in half lengthwise.
Cut around the entire eggplant 1/4" inside the skin.
Scoop out the pulp being careful not to pierce the skin.
Bake the shells 15 min. in a preheated 325 degree oven.

Cut the eggplant pulp into 1" cubes & saute with:
1/2 cup med. chopped onions
1/2 cup med. chopped bell pepper
2 chicken breasts cut any way you like

When chicken is half way cooked add:
1 cup sliced mushrooms
1tsp. chopped garlic
3/4 cup of your favorite spaghetti sauce
salt & pepper to taste
Continue cooking.

Scoop sauteed mixture into the baked shells & enjoy.

If you like, use a little white wine in the saute, substitute 1 cup shrimp (peeled & deveined) for chicken, sprinkle with parmesan &/or chopped scallions or use your imagination.

Garlic Lover's Eggplant

Serving Size : 8 Preparation Time :0:45
Categories : Vegetables Healthwise

Ingredient :

2 eggplants
10 cloves garlic
1/2 cup all-purpose flour
1/2 cup buttermilk baking mix
1teaspoon oregano
1/2 teaspoon black pepper
1 large egg
olive oil
salad oil

Preparation Method:

1. Cut eggplant into 1/2-inch slices. Place in single layer on paper
towels. Sprinkle with salt and set aside for 30 minutes.
2. Using garlic press, press 6 garlic cloves and place into mixing bowl.
Add flour, biscuit mix, oregano, pepper, slightly beaten egg and enough water
to make batter the consistency of pancake batter.
3. Pour half olive oil and half salad oil to a depth of 1/4 inch in a
skillet over medium heat. Crush four garlic cloves with flat edge of knife;
add to oil and saute until lightly browned. Press the cloves against sides of
pan just before removing to release more of the garlic flavor.
4. Coat each eggplant slice with batter; fry, being careful not to brown
too fast. (Do not burn.) Serve immediately.

Try Ajinomoto's "Stir Fry Sauce for Eggplants." (http://ajinomotofoods.com/pages/products/products.asp?nav=30&dl=1&dg=b2)
I personally use it and love it since I dont know how to cook well. It's so easy to use. You just need the eggplants, beef/pork (whatever meat you want) and just put the sauce, mix it and you're done! My favorite is the Mabo Tofu Mild Hot.

PS: I think you can get this at Japanese and Chinese markets. Some Korean markets have them. I get them from Marukai markets, Nijiya markets or Mitsuwa markets.

I like to peel my eggplant - sometimes the skin is a little bitter. Then cut it in 1/2" circles. Put a light bbq sauce or italian dressing or evoo on it and grill it! Put some more of your sauce, etc. on it when you turn it over.

This tastes great and is low on calories.

Before I do anything with eggplants I slice them into 1/4 thick sections and soak them in salt water for 15-30 minutes to remove the bitter taste (they are from the night shade family).

After draining them and patting them dry I toss them in olive oil, salt them and then grill them.

Cut in half. Score accross the inside flesh. Drizzle with evoo and put fresh basil leaves inside the scores .....then....Grill It! I promise...I hated eggplant until I cooked it like this. Good luck and have fun.

cut your eggplant into long flat pieces
salt and pepper them and let them sit a minute or 2
dip them in flour then egg then breadcrumbsdrop them into hot fat
brown them good on both side and begin layering them. in a big old baking pan pour some ragu, then layer with cheeze then add more eggplant
then more cheeze the okra comes next ok omit okra crybaby if you no like mon ami. sprinkle this with cheeze and bake 400 for 20 mins serve with love.

if your a vegetarian i would go with eggplant in garlic sauce.
INGREDIENTS

* 1 medium eggplant, about 300 grams / 2/3 pound
* 1 teaspoon finely chopped fresh garlic (about 2 cloves)
* 1 teaspoon finely grated or chopped fresh ginger
* 1 tablespoon hoisin sauce
* 2 spring onions (green onions/scallions), finely chopped
* 1 teaspoon dark soy sauce

its super yummy. i made it once.

Cut off ends, slice the rest in 1/4 inch rounds.Batter and fry to a golden brown...I use cornmeal instead of flour, add a little cajun spice........Great...............#######
