Is it easier to do it in plastic containers for freezing or shelf-store them in mason jars? HELP! This is my first year doing anything with tomato gardeing.

I freeze them in plastic containers - don't forget to leave some head room for expansion when they freeze. Make whatever recipe you enjoy fresh and just put the extras in the freezer! If you put them on the shelf, you need to use a canning process that takes more time. They reheat just fine. If I've remembered to thaw them, I use the microwave for the reheat. If not, I use a covered saucepan so I can stir them more often as they start to thaw.
