I am on Atkins so I cant have any sort of bread, or oatmeal or anything

No, you dont. just dont put in as much egg. just like 1 egg.

I agree with the one egg only because it acts as a binder but you should add (depending on how much ground meat you're using) a handful of bread crumbs or cracker crumbs; that is a matter of taste. I also add grated onion and parmesean & BBQ sauce but I learned a trick regarding the grease. Place a couple of slices of bread in the bottom of your baking dish & it absorbs & seperates any fat from your meat loaf!!! IT WORKS !!!! Good luck !!

If you can find Atkins bread in your local store or any low-carb bread (like sprouted grain breads that have no flour in them), you can use a slice of those - torn up - in your meatloaf. That's what I do for my hubby who is also on Atkins.

I always use a little dry oatmeal and an egg. It holds together nicely. And now we find out oatmeal is very good for us. A bonus.

The bread or crackers gives the mixture "stability" so you can shape it, and it will keep it's shape when baking. And more than one egg would make it way too "runny" to do that.

I like a mustardy type of meatloaf with carrots, onions, eggs, mustard.

Grated carrots or any grated vegetable - not too much or excess fluid - but acts as a filler and healthy also! Have you tried ground soy beans with it for texture??

You can substitute grated carrot for the breadcrumbs.
