we have a microwave cake pan, can we make an angelfood cake in the microwave?

PINEAPPLE UPSIDE DOWN CAKE

1/4 c. butter
1/2 c. packed brown sugar
1 c. cake flour
1/2 c. sugar
1 tsp. baking powder
1/4 tsp. salt
1/4 c. butter, softened
1/2 c. milk
1 egg
1/2 tsp. vanilla
1 can pineapple slices in syrup
maraschino cherries (as many as pineapple slices used)

Use an 8" square or round pan. Drain can of pineapple, saving the syrup.
Place butter in 8" pan, melt in the oven while preheating to 375°F.

Sprinkle brown sugar over melted butter. Arrange whole pineapple slices and cherries (with cherries in centers of pineapple slices) over the brown sugar in pan. Cut some of the remaining pineapple slices into half circles, then line the sides of the pan with them (standing up).

In a bowl, combine cake flour, sugar, baking powder, salt, softened butter, milk, egg, vanilla and 2 tablespoons of the pineapple syrup.

Pour batter into the pan being careful not to disturb the pineapples and cherries.

Bake at 375°F for 30 to 35 minutes or until cake is golden and has pulled away from the edges slightly.

Remove from oven and allow to stand for a few minutes to set and then turn it upside down onto a serving dish. Serve while still warm

I've heard that eggplant is good brain food. It supposed to improve concentration. I have my doubts but I want to give it a go before I dismiss it as being just another way to make people spend money.

I found a Red Velvet Cake mix in the cupboard that I want to make for dessert, but I need to find a recipe for frosting to go with it, that does not use or needs very little powdered/confectioners sugar.

Because, I am almost out of powdered sugar, and I can't go shopping right now. I have A LOT of granulated white sugar (regular table sugar) that I can use.

I do have a little powdered sugar, but I emphasize, it's really not much left.

I also have:
1 1/2 sticks of butter
milk
evaporated milk
vanilla extract

Anyone know of a frosting I can use for my Red Velvet Cake (not cream cheese based frostings - I don't have cream cheese or like cream cheese based sweets anyway)

Is there any recipe for frosting using Granulated sugar in place of, or in conjunction with smaller amounts of powdered/confectioners sugar?

I heard that yellow corn starch and yellow corn meal were the same? But as I was growing up corn starch was more of a powder like flour and corn meal was more of a grain looking food, which my mom use to add certain foods to and we could eat it? Maybe I just don't remember that far back! So...are they the same? Can you cook with them equally? Ex. substitute corn meal for corn starch and vise versa??

I am looking for some new sandwich recipes for going back to school. I have the same thing every day, a turkey rueben. I also sometimes have Bagels n' Lox or egg salad. I was just wondering if there were any new, fresh, healthy ideas anybody had. I love fresh, healthy stuff, so a recipe like that would be great!! Also, it may need to be a bit easy, seeing as it's made in the morning before school. Anything that would sit well for a few hours in a cooled lunch box (my lunch box has an ice pack, btw) Also, I'd like it to be filling, because I do a lot of sports. Thanks a bunch!!

Can anyone tell me from experience if you can freeze fresh Salsa...I Do Not want to heat can anything. You must answer from experience since freezing doesn't always work unless produce is blanched. I just need to know your results if you have frozen it after making the salsa. Example, was it watery ? The Food Network has recipes but I would like your personal opinions please. Also , I can't use my Deni food sealer so what is the best storage container to use for freezing if you recommend it.

I have recently discovered that simmering chicken in various types of soups make a tasty and easy dinner.
But alas, I am low on delicious soups this evening... Will I get something good if I simmer chicken breasts in some tomato sauce? Pepper, galic, salt and other things will be added as well. Probably served with pasta?

Mine happened the first time I made homemade chicken soup. It had simmered for an hour and a half, the meat was done, the veggies were tender, the broth was rich. I removed the meat and veggies onto a plate, then put the strainer in the sink and poured the soup into it -- and the soup went down the drain! Duh, now I stop EVERY time before the soup is done and make sure I put the strainer on top of another pot - so the soup goes in another pot!!!

My fiance' will be coming home from his deployment and I'd like to cook a nice dinner for him. Does anyone know of a great, easy recipe? Something you have personally tried and really enjoyed. I'm not really looking for a link just an answer based on personal experience. I live in a small town so if it calls for anything that I can't find at a Wal-Mart grocery store it could be difficult. He is a Marine and will eat anything! =) Thanks.
