I heard that yellow corn starch and yellow corn meal were the same? But as I was growing up corn starch was more of a powder like flour and corn meal was more of a grain looking food, which my mom use to add certain foods to and we could eat it? Maybe I just don't remember that far back! So...are they the same? Can you cook with them equally? Ex. substitute corn meal for corn starch and vise versa??

thanks!!!

No, corn starch is not the same as the meal. Meal is ground corn, i.e. the same ingredient you would make corn bread from. Corn starch (ground) is the starch subtracted from the corn and is used as a thickener in sauces, pies, etc. It's naturally a bit sweet.

And no, I do NOT recommend substituting one for the other! A younger sister experimented with corn bread using the starch— it was... quite a memorable experience.

Corn meal is just corn that's ground up. Corn starch is the starch extracted from the corn.

Corn today is made into all kinds of things, but starch was the first thing made from corn. It was used to starch clothes long before it was ever used in cooking!

Cornmeal is used for baking, making tortillas etc. Corn starch is a fine powder and used to thicken sauces/gravies. Cornstarch can be used in baking e.g. shortbread. It seems to give a lighter, smoother texture.
