Would like to make a meal with noodles mixed with vegtables. No cheese or tomato sauce. Any recipes-ideas?

How about teriyaki noodles with stir-fried veggies? This is my own recipe.

1 package vermicelli noodles, cooked, drained, and rinsed in cold water
3/4 C. bottled teriyaki sauce
3 tablespoons oil
1 C. slivered carrots
1 C. frozen snowpeas
1 C. mushrooms
1/2 C. red peppers, diced
1 Tbsp. minced garlic
1/2 C. slivered almonds, sauteed briefly in butter (optional)

Cook the noodles, rinse in cold water, and set aside. Heat the oil in a deep skillet or wok, add the garlic, and sautee briefly. Remove garlic with slotted spoon.

Add mushrooms and peppers to seasoned oil, sautee until tender, and set aside. Add carrots and snowpeas, and sautee until tender.

Combine noodles, peppers, and mushrooms with the carrots and snowpeas. Add sauce, toss with veggies, and heat through. Garnish with almonds, if desired.

Well, you could always do a veggie fettuchini-alfredo. This sounds good. Do some fettuchini noodles, and on the side, the alfredo sauce (found in a jar) with some italian style veggies (zucchini, squash) and other veggies (maybe carrots or broccoli). Another idea, do any type of pasta noodles. In a skillet, sautee some fresh garlic, veggies of choice in butter. When all sauteed, take out and leave the drippings (butter) in the pan. Add some flour to the butter and blend well. Add a little broth/stock (veggie) to it. Add some more flour (just a spoon full) and disolve. You will do this to make a "gravy" persay. Once you have enough for all your noodles and it is a good consistency (like tomatoe sauce or thinner), add the veggies with garlic. Bring all to a slow boil. Once done, add to your noodles. Toss, add salt and pepper to taste and you are done. I hope this helped and good luck. Remember, use your heart when you make it and it should be delicious.

Noodles with vegetables, usually sauteed or steamed, are actually really tasty and can be a healthy alternative to noodles with heavy cream sauces or red meat sauces.
You can got to the supermarket and try to find pre-cooked ramen or soba noodles (not the dry kind) and they usually come with sauces. Throw in some frozen veggies or pre-cooked ones and stirfry together with some olive oil. Add salt or pepper to taste, or some soy sauce or minced garlic. Very tasty.

Serve it chilled as a pasta salad, perfect for a summer meal...meaning you give it a light coating of your fav salad dressing:

Ranch, Ital, or any of your fav bottled salad dressing.

Olive oil and balsamic or reg vinegar

Sesame oil and ginger and garlic, garnish with some toasted sesame seeds.

Sunflower oil with some salty sunflower seeds (hulled of course)

Pesto, basically pulsed up basil and olive oil with pine nuts.

Salsa...well, this is kind of a tomato sauce

Soy sauce with ginger and sesame, just a tiny amount of orange juice concentrate to throw your mouth for a loop.

Instead of any vinegar in any salad dressing, use a touch of booze...something like olive oil and bourbon or other high flavor would dress this well as a side for steaks or chicken.

These oils are just a light touch, you can infuse them with extra flavor, you can also apply them with a sprayer if you are really concerned about fat grams, which brings the amount down to trace fat content...while still giving you something for herbs and spices to stick to.

You can also add some chunks of tuna or chicken to add protein, serve on a bed of lettuce or in a carved out tomato for a few extra vitamins.

A nice pasta salad would be good. Just skip the cheese chunks and toss with oil and vinegar or Italian dressing. You could also make a white sauce with cornstarch and make an alfredo type dish without cheese if you want a warm dish.

Make a nice soup. Add noodles and veggies to saucepan with tomato sauce or alfredo sauce.

What about noodle salad with cucumbers and tomato!

It's a cold salad but it's very good....

*Boil your noodles (i use the veggie noodles; spiral)drain when done.
*Chop up a cucumber and tomato and whatever else you like maybe onions or bellpepper, spinach, sweet pepper.....

Mix cooked noodles with chopped veggies and add Italian Salad dressing....mix well and keep chilled!!!

Cook noodles,mix with any leftover veggies,or steamed veggies from frozen,saute garic and olive oil and mix together and season to taste. Salt is bad for you in huge amts like in the ramon packets,use spices instead and you won't have to give up salt when you are older.
