I love Jiffy.The corn bread always turns out great.I like to add things to the mix for variety.
Add 2 tablespoons of honey for a sweet corn bread.
For a South western version I add 1/4 a cup of drained Mexi-corn and 1/4 cup of grated pepper jack cheese.
My husbands favorite is with 4 slices of crisp crumbled bacon and 1/4 cup of grated sharp cheddar cheese.
In the fall I love the smell of it baking when I add a little cinnamon and nutmeg and serve with warm apple sauce.A great side dish to compliement pork,turkey or chicken.
You can make corn muffins using the same recipe.Enjoy.

Jiffy is the best boxed cornbread, but I rarely use it because it's so easy and much less expensive to make the recipe that's on the back of the container for Quaker's yellow corn meal. They do taste about the same though. Try to use cast iron to bake it. That adds extra crispness.

Jiffy is basic and you can add to it- but Krusteaz Honey Corn Brea mix is really good!
