Sounds like they were waterlogged try using 1/2 as much water, for 3lbs of crawfish add 1/2cup Old Bay and 1/4 white onion and let steam - you can place potatoes at the bottom of the pot (small red) and let them cook for the first 20 minutes then add the crawfish so they don't sit directly in the pan. Cover and let steam and additional 10 minutes. Turn off fire and let rest for 5 minutes drain off water and serve with drawn butter with Tabasco for dipping if you like. Good Luck!

Boiled Crawfish
INGREDIENTS
2 large onions, quartered
10 large cloves garlic, halved
2 lemons, quartered
2 oranges, quartered
5 large stalks celery, cut into chunks
1/4 cup black pepper
1/4 cup seasoned salt
6 jalapeno peppers, halved and seeded
10 pounds live crawfish, rinsed
DIRECTIONS
Place onions, garlic, lemons, oranges, celery, and jalapeno peppers into a 4 or 5 gallon pot. Season with pepper and seasoned salt; fill with enough water to fill the pot 3/4 full. Bring to a hard boil over intense heat, and allow to boil for 20 minutes. Add the crawfish, cover, and boil for 20 minutes until the shells turn red. Drain and eat.

Put your spices (lots of cayenne) in the water and simmer 20 minutes BEFORE you add the crawfish so the water is infused with the spices. Then throw in the crawfish and simmer until they turn pink.

Boil'em for about a minute...just until they start to turn white, then quickly dunk'em in ice cold water to stop cooking. Then make a spicy sauce using tomato puree as a base, then use lots of cajun spices, including cayenne, chopped habaneros or jalapenos, okra to thicken, a little sugar to sweeten. Add your crawdads and allow to simmer for about 10 minutes, then serve over sticky rice. Enjoy!

depending on how much you plan to boil, use lemon juice, cayenne pepper, salt and oinons. They also have the mix already made up you can just add more cayenne pepper.
