It is true that most anything will freeze reletively well. There are limitations. Most notably would be things that are thickened with starches. Sauces are the biggest complaint that I used to get. Anything thickened with starches (corn, arrowroot, potatoe, or a roux) will break, meaning it will seperate. I could tell you how to fix this but its not an easy fix. You would have to get either a commercial thickener made to be frozen or a health food type thickener and then convert to use them. The other notorious one is high water content food. Water expands during freezing. Its why "water added" ham looks like it formed bubbles in it after freezing. (I know this isn't a good example but thats what does it.) As for looking in the frozen section of the market. Read the ingredients. You will see modified ? starch. I will admit that is what I use for my clients but it is made from corn and made to be frozen. The other thing to watch out for it products that you get frozen and then prepare and freeze them again. Most all frozen food is flash frozen. Very quickly brought to a temperature suitable for shipping. This commercial method doesn't allow time for water to expand and doesn't effect the product much. When frozen again, this in itself isn't a good idea, and thawed it just doesn't look good. Below is a link to recipes that are designed to be frozen and reheated at meal time. Lasagna freezes really well - and he'd probably get a couple of meals out of that.
Chicken Pot Pie also is good to freeze - you can make indiviual ones or one big casserole type.

You can make you own meals, plate, vacuum seal and freeze them for eating at a later date. This is a simple but also time consuming process. Your only limits are your imagination. You can freeze them on your own dinnerware just like tis your own TV dinner.

Just about anything you cook you can freeze. Just look in the frozen food section of your supermarket....everything under the sun is there.

My mom used to have to do this when my dad was away at work for a week and she was away at night school. She'd make casseroles of any kind or chili and leave it in the freezer with instructions for him for when he got home. And this was before the microwave, but it worked for them.

lasagna is a good one or any kind of casserole also any food keeps well in the freezer that's why they designed it!!
