I found a Red Velvet Cake mix in the cupboard that I want to make for dessert, but I need to find a recipe for frosting to go with it, that does not use or needs very little powdered/confectioners sugar.
Because, I am almost out of powdered sugar, and I can't go shopping right now. I have A LOT of granulated white sugar (regular table sugar) that I can use.
I do have a little powdered sugar, but I emphasize, it's really not much left.
I also have:
1 1/2 sticks of butter
milk
evaporated milk
vanilla extract
Anyone know of a frosting I can use for my Red Velvet Cake (not cream cheese based frostings - I don't have cream cheese or like cream cheese based sweets anyway)
Is there any recipe for frosting using Granulated sugar in place of, or in conjunction with smaller amounts of powdered/confectioners sugar?

French Vanilla Icing
2 tablespoons flour
3/4 cup milk
3/4 cup sugar
3/4 cup butter, at room temperature
1 teaspoon vanilla extract
Mix flour with milk. Cook in a small saucepan over medium heat until thickened and smooth, stirring constantly. Remove from heat. Let cool completely.
Cream sugar and butter until thick and smooth. Add flour-milk mixture and whip until light. Add vanilla and whip until light. This is a soft icing.

I know what you mean...want to make something but don't have my "normal" ingredients! This is a really good frosting and should be excellent on red velvet cake. Hopefully you have a hand electric mixer.
Seven Minute Frosting
1 1/2 cups granulated sugar
1/3 cup cold water
2 egg whites
2 tsp. light corn syrup OR 1/4 tsp. cream of tartar
dash of salt
1 tsp. vanilla
In the top of a double boiler, combine all but the vanilla. Beat 30 seconds on low speed of electric mixer. Place over boiling water (upper pan should not touch water). Cook about 7 minutes while beating constantly on high speed of electric mixer or till frosting forms stiff peaks. Remove from heat; add vanilla. Beat 2 or 3 minutes more or till of spreading consistency.

If you have a blender or grinder of some kind, then you can just grind up the granulated sugar to make it of a finer consistency like that of powdered sugar. All powdered and confectioner sugars are is finer grains of granulated sugar.

This is very easy, trust me.
EASY FROSTING
1 med. Cool Whip
1 sm. pkg. instant pudding (any flavor)
1 c. milk
1/3 c. powdered sugar
Mix milk and pudding. When blended, add Cool Whip and powdered sugar. Mix well. Frost cake, refrigerate until served. Easy, delicious.
EASY CHOCOLATE FUDGE FROSTING
2 c. sugar
1/2 c. cocoa
1 stick butter
1/2 c. milk
1 tsp. vanilla
Combine all ingredients except vanilla. Boil for 2 minutes. Beat until spreading consistency. Add vanilla; beat well.
EASY CHOCOLATE FROSTING
1 stick butter
1/3 c. Hershey's cocoa
2 c. sugar
1/4 tsp. salt
2/3 c. evaporated milk
1 tsp. vanilla
Melt butter slowly in heavy saucepan. Add other ingredients except vanilla and boil 3 minutes. Add vanilla and cool. Beat to spreading consistency and spread.

Yes, make a buttercream icing. I know my mother used to make it with granulated sugar. Unfortunately, I cannot seem to contact her for the recipie, so try googling for buttercream icing with granulated sugar.
