Stuffed peppers!!!! they are EASY!!!
1 pound ground beef
1 small onion, chopped
2 cups Minute Rice
5 medium,round green peppers
3 cups any kind jar spaghetti sauce
shredded mozzarella. cheese
Cut off tops of green peppers and clean seeds out. Boil in large pot for 5 minutes or untill peppers are a dull green.
Brown beef with onion. Add uncooked rice and 2 cups of spaghetti sauce.
Fill peppers with meat/rice mixture Pour remaining cup of spaghetti sauce over peppers. Cover with aluminum foil and cook for 20 minutes.
Remove foil and sprinkle with mozzarella cheese. Cook for another 10 minutes, uncovered.
you could have a nice salad with it and cheese cake sounds wonderful, i have a cheese cake in the oven right now...and im making stuffed peppers for dinner tonight....thats kinda cool!!!
instead of salad you could also make mashed potatoes or both and have the salad before dinner....when i invite the family over or cook dinner for them and bring it over i go all out being i don't do it very often :)

Super Easy Chicken Cacciatore
2 to 3 pound chicken
1 cup flour
2 tsp garlic salt
1 tsp pepper
1 tablespoon butter
olive oil
1 large onion, diced onion
1 stalk celery diced
1 carrot diced
2 cloves garlic, chopped
2 cups sliced mushrooms
1 cup beer
1 large can crushed tomatoes + on can water
1 small can whole tomatoes broken up
2 pks zest Italian salad dressing mix (dry)
Pre-heat oven to 325. Coat chicken in flour, garlic salt and pepper. In a Dutch Over or large, heavy bottomed pot, saute chicken in olive oil, until browned. Set chicken aside. To the pan add butter and melt; saute onion, celery, and carrot until onions are transparent. Add garlic and mushrooms until soft. de-glaze pan with beer. Add tomatoes and water, bring to a simmer. Add chicken, bring to a simmer. Salt and pepper to taste. Put into 325 oven for 45 minutes. Serve with pasta or rice, garlic bread and a big salad
I know the beer is really unconventional, but it adds a really good flavor...

How about a Juicy pork tenderloin? Just purchase a good quality tenderloin and season put on a grill with in direct heat with the fat side up and cook it until its done. If there is not much fat on top you may want to add a few slices of bacon to the top so that it bastes itself. It's easy and delicious, it should cook slow, watch for flame ups and enjoy!

Veal cutlets on a bed of sauteed Spinach with Garlic smashed potatoes.
Get Veal for Scalopini at your grocer enough for the diner
Bread it, fry it until golden brown and hold aside.
Get fresh Spinach enough for your dinner
Fresh Garlic 3 cloves smashed and chopped
EVOO Extra virgin Olive oil
In a saute or frying pan on medium heat. Put enough EVOO to coat the pan. Add garlic and gently add spinach until it whithers down constantly mixing.
In a pot Boil cut up potatoes with skin on until fork tender.
Smash 3 cloves garlic.
Drain Pot and add garlic, butter and ,milk for smashed potatoes. They can be lumpy/.
Plate the veal on top of the Spinach with potatoes on the side.
Add a salad of your choice and you have Saturday Night's dinner.
Enjoy.

Grilled Raspberry Chicken
• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)
Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.
