can't find a recipe online....

Hi, i need to cook a lunch 3-course meal for a child. But i have to follow the criteria. The meals have to contain all nutrients possible but must be less salt, sugar and fat. I actually have to do modification of the meals from a kid who frequently eats junk food.

lets say, a kid loves eating cheeseburger, fries etc then i have to cook something similar but healthier of a healthier substitute.

please help me come up with 3 dishes of junk food a child usually eats for lunch and come up with a healthier version/modification of the 3 dishes. thank you

I found a gas station near my house that sells the best maple walnut cookies. They are full of walnuts and taste like maple syrup. I'd rather make them than buy them but I need a great recipe. The cookies they sell are large, thick, dense, not quite crisp around the outside and almost fudgy in the center.
If anyone has a recipe that they've tried I'd really appreciate it.

Every time I search for coffee cake I get some borring cake that should be eaten with coffee but does not contain coffee. I am after a quick and easy coffee flavoured cake BUT with no walnuts as the birthday boy is allergic and i can not be bothered to buy any. The less ingredients the better.

I love making puff, pastries, and homemade snack in my spare time. And I'm thinking to open a shop. I think the name should describe, healthy, delicious, practical, lingering. Help?

I go to people's houses and cook a meal for them but do not know what to charge for this service. I plan the meal, do the shopping (I keep the receipt to be reimbursed for the food), and cook the meal. The meals usually consist of an entree and at least two side dishes (all made in their kitchen-not just opening a quick, "pre-made" dinner and warming it up). I'm curious what everone considers a fair amount. I prefer it to be a "per meal" instead of an hourly rate. I take in consideration any food restrictions (for health reasons, dieting, or allergies) or preferences ("Jane doesn't like carrots.") when planning the meal and can make favorite dishes on request. Also, depending on the size of the family, they usually would have left-overs.

I am curious what people think is reasonable and fair.

I keep a bunch of garlic in my cupboard, and there are some bunches I haven't used in over 6 months. The cupboard is nice and dry and dark, and when I look at the garlic, there isn't much mold or bruising anywhere, just a little wrinkling and some very small sprouts at the top. When is it time to toss away your garlic?

i am a single mom, and my daughter and i live off of ramen noodles, and liver scraps from the butcher's assistant we know at the grocery store. here lately, though, she refuses to eat the meals i cook for her, and makes me take her to mcdonalds and she gets a small order of chicken nuggets, thats all she eats all day. i even tried deep fat frying the liver, but she wouldn't touch it. i'm scared that one day she will become really sick from eating all the grease from mcdonalds food everyday. what should i do to get her to go back to eating what i cook her 3 times a day, the ramen noodles and liver scraps. i cant afford much more than what i spend on those foods. and no, i'm NOT going to resort to charity of food stamps and WIC. here is my weekly grocery list; cheese slices, ramen noodles, (free liver scraps), juice for her, pepsi, and vodka for me.

I got a recipe(http://www.nytimes.com/2006/11/08/dining/081mrex.html?ex=1320642000&en=d5976d62a4577548&ei=5088&partner=rssnyt&emc=rss) that has been getting great review from coworkers.

The problem is the largest enameled ware I have is a 4 qt, not big enough for this. However, I do have a 8qt stock pot of good quality(cuisinart), reputed to be oven safe up to 550F.

So do you think it would be an okay substitute for a 6 to 8 qt heavy covered pot? The recipe calls for a preheat of 30 minutes at 500F and bakes the bread for another 30 min covered and additional 15 to 30 min uncovered.

My concern is how safe is it to expose the stainless steel pot under such high temperature for such long time. Am I just better off skip the pot all together.

A few years ago, we were in southern Thailand (Ko Lanta, near Phuket) during low season. Several of the resorts that were there at the time (pre-tsunami) had these great pancakes we could and would eat anytime.

They were sweet and fluffy and didn't take too long to make (although I assume they were using some previously prepared batter).

I haven't been able to find a recipe for them anywhere so I hope someone here can help.
