3 potatoes, 1 lemon skin, parmesan, eggs, a drop of milk, olive oil.
peel the potatoes and cut them in small pieces, arond one centimetre each. fry them in a lot of oil (on high temperature) till they are complitely golden. put them in a big pot, add the lemon skin, the parmesan (aroung 30 gr.), the mashed eggs (at least 3), the milk and some salt. mix everything and put everything in the pan to fry it. this time with just a drop of oil. it has to be a big salty cake, so pay attention when you turn it, try not to breake it.

You said it doesn't have to be Spanish, but it might score you some brownie points if you bring this in: Peurco Pibil.
The achiote paste has a lot of ingredients, which you can circumvent by buying some storebought. Everything else is simple, and most of it you do ahead of time: you just season it, wrap it in banana leaves (find it at a hispanic or oriental store, or substitute some corn husks, the kind you use to make tamales. You can get corn husks at Wal-Mart, so even if it sounds weird, it's easy to find.)
After that, you just bake it. Awesome, awesome food, traditional, easy... And it's also the fav food of Johnny Depp's character in Once Upon a Time in Mexico. ;)

Teryaki Rice Wraps
4 Tortillas
1 lb. Sliced Chicken, Beef, Shrimp or Pork
1/4 cup Light Teriyaki Sauce
1 pkg. Broccoli Spears Frozen
4 cups Rice cooked
2 tbsp. Oil
Preparation:
Brown meat in oil and add teriyaki sauce when meat is fully cooked.
Prepare broccoli and rice as per package directions. Combine broccoli, rice and chicken.
Divide mixture into 4 equal portions. Fill, wrap and roll.

Coat in flour and deep fry at 375 for 3 minutes.

How about swedish nuts!!
INGREDIENTS:
1 lb. pecan halves
2 egg whites
1 cup sugar
Pinch salt
1/2 cup butter
PREPARATION:
Preheat oven to 325 degrees. Beat egg whites until frothy. Add salt, then sugar, one tablespoon at a time, beating until stiff peaks form. Fold nuts into meringue. Melt butter in 15x10 inch jellyroll pan.
Spread coated nuts over butter.
Bake 30 minutes, stirring every 10 minutes, until nuts are light brown and all butter is absorbed. Cool and store in airtight container.
Serves 8-10 (or one little boy...)

Glazed Salmon Fillets
INGREDIENTS:
4 (1/2" thick) salmon fillets
1/3 cup seafood cocktail sauce
2 tablespoons honey
1 teaspoon garlic paste
PREPARATION:
Preheat broiler. Place salmon filets, skin side down, on broiler pan. In small bowl combine remaining ingredients and brush over salmon. Broil for 4 minutes, then brush with more sauce and broil for 2 minutes longer, until salmon flakes when tested with a fork.
Pasta with Garlic and Cheese
INGREDIENTS:
1 lb. spaghetti pasta
6 Tbsp. olive oil
2-3 cloves garlic, minced
1 cup chopped flat leaf parsley
1/2 cup grated Romano cheese
PREPARATION:
Cook the pasta according to package directions. Meanwhile, chop the garlic and parsley and saute the garlic in the olive oil for about 2-3 minutes, stirring frequently. Combine with the parsley and salt and pepper in serving bowl. Drain the pasta and toss with the garlic/parsley mixture. Top with cheese and toss again. Serve with more cheese, if desired. Serves 4
Pesto Pasta
INGREDIENTS:
1 lb. uncooked linguine pasta
12-oz. container refrigerated basil pesto
2 cups grape tomatoes
1/2 cup grated Parmesan cheese
PREPARATION:
Cook pasta as directed on package; drain and return to pot. Stir in basil pesto, tossing gently over low heat until pasta is coated. Add grape tomatoes and toss for 1 minute. Sprinkle with cheese and serve.

real spanish rice is only a few toast the rice in oil add chopped onion, chopped tomatoe and chicken broth then get a bullion cube from knorr it is tomato with chicken flavor simmer till done very good too then you can top it with salsa
