am looking at doing cous cous with it

Cous cous is really easy to make and I like to cook tilapia on the grill. It's very quick, though! I also like to marinade it overnight with lemon or lime juice and spices. Orange juice is good, too!

Anyway try baking the fish whole in aluminum
foil with:- Garlic,Ginger,Lemongrass,Chilli,Corriander,Lime
leaves and a splash of coconut milk. Wrap nice
and tight to keep the flavour inand bake at 400
degrease for 10-15 minutes or until cooked..

Serve with the Cous Cous and a light salad of
Roquette/Baby Spinach leaves and your Fav
vegies(Tomato,Cuccumber,Avocado) sprinkeled
with lemon juice and olive oil..! Yum ('-')

Delicious Tilapia filets

For each filet...
1) spread with a thin layer of mayonaisse ( this will keep the fish from drying out)
2) Squeeze fresh lemon juice over the filets
3) Sprinkle with fine bread crumbs
4) Pour 1 T. melted butter over the bread crumbs
Season to taste with garlic, salt, and pepper

Bake at 400 or broil for 14 -18 minutes, depending on size of filets.

Tilapia can be fried, broiled, grilled or blackened. Remember that the skin is also edible. Tilapia cooks quickly; when the flesh turns opaque white, it is ready to be served. Tilapia prepares easily has a mild flavour and lends itself easily to any kind of seasoning you want to add. If you grill it be careful you don't over cook though. It can be substituted for most kinds of fish, especially red snapper, sea bass or porgy.

So if you have a favourite fish you usually use, use the same recipe and you are likely to have a great experince.

I make Tilapia or St. Petersburg fish alot and I serve with cous cous or wild rice. This is how I prepare it. Feel free to add fresh herbs and your choice of veggies
lightly flour the filets, heat 1 tbsp olive oil in pan, cook til lightly brown on both sides and fish is opaque. Keep warm in low oven. In same pan over med heat add a generous pat of butter chopped garlic or shallot (my preference because it is milder) saute til soft, reduce heat add 1/2 c white wine, chopped sundried tomatoes, capers, black olives and simmer til heated through. If sauce is not thick enough whisk in more butter
Pour sauce over fish and garnish with fresh parsley.

1/2 cup fresh parsley, chopped
1/4 cup sun-dried tomatoes, chopped
1/4 cup roasted red peppers, chopped
3 tablespoons chopped green olives
3 tablespoons toasted pine nuts, chopped
1/4 cup olive oil
1/4 cup white wine
salt
pepper
1 1/2 cups couscous
1 1/2 lbs tilapia fillets
2 cups water
lemons

Preheat the oven to 375 degrees F.
Stir together sun-dried tomatoes, red peppers, olives, pine nuts, olive oil, parsley, salt& pepper& couscous.
Place tilapia in a single layer in a baking dish and drizzle with wine, salt& pepper.
Spread couscous mixture over the top of the fish, filling in the whole dish.
Pour the water over the entire thing, being careful not to disturb the couscous.
Bake for 25 minutes.
Serve with a squeeze of fresh lemon juice.

Most fish is best baked. Grease something the fish will sit in or on. Season the fish with salt and pepper and put it in/on the pan. Put a pat of butter on the fish and roast at 425 degrees for 4 minutes. The fish should flake and no longer be translucent. Serve hot.

all you have to do is simply put chopped tomatoes, chopped onions and celery or kinchay in it's tummy. Then rub the fish with salt and citrus juice mixture to remove it;s odor. Then steam it. So yummy!!!!!
