Make an omlette with the pork and vegetables and herbs etc. Just make sure it is piping hot before you eat it!
Serve it cold in a salad with some chutney or pickle to liven it up a bit.
Bubble and squeak - basically putting all kinds of leftovers.
Sandwiches as someone else has also mentioned.
Cook some sauerkraut in the normal way but instead of adding bacon add the cold pork. Serve with potatoes in any way shape or form you prefer and a green salad.
If you are eating the pork cold, it will always need something with a bit of a kick to give it moisture and a bit more flavour.
Pork curry.
Chinese stir-fry.
The list is endless!
Only problem would be what to do next!!

Make Green Chili Stew. It's quick, easy, and inexpensive. I've used it for large caterings and have always been asked for the recipe. It can be either cubed or ground. You'll also find some nice surprises with the other recipes. One of them won a Texas state-wide recipe contest. You'll have to guess for now. You'll thank me later.

oh make a nice pork curry or a noodle stir fry with your pork or even mix your pork with mayo chopped spring onions an sweetcorn an have it in a jacket potato .

chop it up little and warm up with some veg then add to rice with a bit of soy sauce and you have pork fried rice
