Hi, i need to cook a lunch 3-course meal for a child. But i have to follow the criteria. The meals have to contain all nutrients possible but must be less salt, sugar and fat. I actually have to do modification of the meals from a kid who frequently eats junk food.

lets say, a kid loves eating cheeseburger, fries etc then i have to cook something similar but healthier of a healthier substitute.

please help me come up with 3 dishes of junk food a child usually eats for lunch and come up with a healthier version/modification of the 3 dishes. thank you

A healthier response to taco bell


-Taco Pie...
Line a pie Plate with sof tacos, then layer combo of extra lean ground beef (simmered with chlli powder, onion, garlic pepper and a little sea salt+ add a tablespoon of roasted red pepper cream cheese and stir before layering) and home made salsa .. continue to layer taco+ground beef mix+salsa until you get to the top of the pie plate. sprinkle the top with a littlle low fat cheese (colby and motz is a tasty combo) and bake at 350 for half hour. Take out of the oven and let cool for 5-10 min. Dish out the pie and serve with lots of fresh guacamole and veggies on top, a little low fat sour cream if necessary. Serve with some spansh rice on the side. No need for salad, its on top of the pie. Slice up some apples and organic peanut butter (reg store bought has lots of salt and sugar) for dessert... Hope this helps, not only quick and easy but kid friendly and quite healthy... oh and dont forget a glass of milk!!!

Well I have a few ideas =]

french fries- use sweet potatoes instead. cut them up like regular fries, coat w/ a tablespoon oil and a lil salt and pepper, bake in oven at 450 about 18 minutes

pizza- find whole wheat tortillas, top w/ sauce, reduced fat cheese and lots of veggies, bake in oven at 350 about 8 min.

mashed potatoes- use cauliflower instead. boil the cauliflower and mash up w/ a little milk and some parmesean cheese (really good actually)

Chips- on a baking sheet sprinkle little piles of parmesean cheese bake in oven till melted. cool and peel off the parmesean and you have cheesy "chips"

You can make fruit smoothies (replace icecream or milkshakes) lunchmeat wraps w/ lots of veggies (replace fatty sandwhiches and subs)

very easy to make healthy burger and fries.... just use lean beef mince, combined with egg, breadcrumbs. make it into a rissole and cook. slice up potato into wedges and steam or microwave until almost cooked. then spray lightly with oil and bake in the oven until golden brown. add some salad and serve with burger with breadroll (preferably wholegrain).
or you could make healthy pizza. use lebanese or flat bread, top with tomato paste and whatever toppings you want (mushrooms, onion, capsicum, ham, etc, nicer if you cook them separately first in a fry pan - non stick is best so you don't have to use oil, or you can use spray oil), top with a little cheese and grill.

i have a 2 year old who became obsessed with french fries(and i rarely took her to restaurants that served them)but she got them stuck in her mind.....so i did a little improvising. I slice up pineapple into sticks, fry lightly so they kind of have the coloring, and served them with pureed mangoes(her "kechup), she loves them and now expects them whenever she asks for fries.....

Beef can be substituted with ground turkey (burgers) or even ground venison. Venison is super lean and I, and my children, love it! We have venison burgers all the time.
