Typically refers to a powdered naturally derived enzyme powder. The enzyme most commonly used is papain which comes from papayas. Meat is sprinkled with the powder and the enzymes help to break down the meat fibers. The same result can be obtained by marinating meat in papaya or pineapple juice. Alternately, meat can be tenderized by using a meat mallet. Purchase powdered meat tenderizer in most grocery stores.

As stated, just sprinkle it on the meat and let it set. Many tenderizers say to sprinkle and pierce with a fork. It is more the piercing than the product that does the tenderizing. Piercing meat with a fork breaks up the fibers. If you look at meat markets, they have a machine with rows of sharp "needle-like" pins that do this.

Simply sprinkle it onto your meats, and cook like normal. My husband makes a pot roast that is abslutely delicious, and He uses a ton of it and seasoned salt on it. Depending upon the meat and the method of cooking, you may want to do as he does and turn the meat and sprinkle it again during cooking.

You sprinkle it on your food.

Most meat tenderizers are mostly salt with some sugar thrown in. You could just as easily use coarse or kosher salt to achieve the same affect.
