Figs, if so do i cook the figs before wrapping the ham around them? Pear? Here's what's up for the menu...

Start with a small mixed spring salad, strawberries, blueberries, etc, appetizer is grilled garlic scallops over a bed of greens. Continue with sliced beef over mango salad, finally dessert is my favorite, a simple tiramisu cake.

Mmmm

Chefs on the cooking shows always recommend using stainless steel pans for cooking nearly everything except fish and eggs, in order to get that "fond". But I find that, unlike on TV, everything I cook in the stainless steel pans stick so much that it destroys the surface integrity of the food when I have to scrape them off the pan.

HELP!! What am I doing wrong???

Whenever I boil them they get way too soft. If I boil them less, they're still raw. What's the best way to boil potatoes and to know that they're done just right?

I just bought one and am wondering if it is really worth the cost (I got mine for $400)? Is there such a thing as "over mixing" with it? Can I just throw all ingredients in the bowl and "mix" or do I have to follow the recipe and mix things seperately?

Thanks for your advise!

I have an amazing cheesecake recipe that puzzles me. It says to get the mixture in the springform pan, then place that pan in a deep baking dish with an inch of water in it before placing it all to bake in the oven. My springform pan is not watertight... Is it just because it is a cheapo, or are all springform pans not watertight??!?? Please help!!
