Okay, for some reason I've got A LOT of potatos. So far I've made potato salad, mashed potatos, hashbrowns etc. whose got some GOOD recipes?

My mom has a potato dish she makes for every gathering ~ it's always requested! She uses frozen shredded potatoes, but you can shred fresh ones just as well. mmmmm. . . This recipe is pretty close:

Scalloped potatoes are real good. You can add ham and onions or cheese an onions or just onions are okay, too. I've sometimes made with salami instead of ham. You make a medium white sauce or rue, peel and slice potatoes thin rinse, drain and set aside. Chop ham and onions and add to white sauce or add cheese and onions to white sauce. Make sure potatoes are drained real well. Put potatoes into large mixing bowl, add salt and pepper to taste (less salt if you use cheese), poor white sauce over top and mix well. Heat up some whole milk or half and half if you need more liquid. Pour into greased 9 X 13 Pyrex baking pan or round pyrex casserole, bake at 350 degrees for 1 hour, maybe more depending on the quantity you are making.

Another poster had a good idea with potato soup. I peel and cube potatoes, add quite a bit of chopped celery, a small onion or a bit of dehydrated onion, chicken broth to cover potatoes or 1 chicken bullion cube and enough water to cover potatoes and cook until potatoes are soft. Heat up about 1 cup or so of half and half and add to cooked potatoes slowly as you mash/mush the potatoes. Add a couple tablespoons of sour cream and stir together. Serve with shredded cheese and bacon on top.

MARK’S POTATO PANCAKES

(Makes about 8 pancakes)

2 large Russet or long white potatoes, peeled and roughly chopped
2 large shallots, or one small onion, roughly chopped
4 tablespoons flour
Salt and pepper to taste
1 large egg
2 tablespoons melted butter
Vegetable oil, as needed for cooking

Place the potatoes and shallots in a food processor and process until finely chopped. Transfer the mixture to a fine mesh sieve and push as much of the excess water out as you can with a spatula. This is critical for the texture and structural integrity of the pancakes. Stir in the flour, salt and pepper. Whisk the egg with the butter in a separate bowl and stir into the potato mixture. The batter should be loose but if for any reason it’s too runny, you can always add a little more flour.

Heat a 14-inch skillet and add oil to a depth of ¼ inch. Wait for the oil to become very hot. With a large serving spoon, dollop portions of the batter into the oil, tapping it with the spoon to flatten it just a little. The oil should come halfway up the pancake so adjust the thickness accordingly. You should just be able to fit 8 pancakes about three and one half inches across. Pan-fry until browned on the first side, flip once and brown the other side. Drain on paper towels and serve with sour cream, butter, chives or even plain. They’re delicious all by themselves.

I came into this same issue a few years ago when I got a free 50lb bag with my christmas tree. kinda weird.

I love roasted potatoes. wash the potatoes really well, leave the skin on and cut them up into bite size pieces (not too small) coat them with olive oil, salt pepper, fresh rosemary (or dried) parsley and any other herbs (herbs dr provence, italian mix, whatever you have in the cupboard). lay them out in a single layer on a sheet pan and roast in a preheated oven set at 425 for about 25-30 mins, tossing them half way through.

Easy potato pancakes - use leftover mashed potatoes, add a little milk if they are dry and form into pancake shapes, pan fry. Yummy served with ketchup.

Homemade french fries, deep fry shoestring style cut potatoes in peanut oil, season with salt. you can use a counter top deep fryer or a pan with oil, keep the oil between 365-375 degrees at all times. You can also thin slice the potatoes and make homemade potato chips. You can bake these instead of frying them, spritz them with a little PAM.

Take a large baking potato and use an apple core tool to make a hole all the way through lengthwise
(save the plugs)
Cut the plugs about 1/2 " long...Place a plug back in tone end of the potato..
Now fill the hole with crispy bacon, butter, and minced onion.
Place the other plug to seal thr inside...
Bake as normal, enjoy the surprise when someone cuts their potato open and finds the goodies already inside.

Potato Bread


1 small Maine Potato, shredded
1/2 cup orange juice concentrate
1/4 cup water
1/3 cup orange marmalade
1/4 cup vegetable oil
1 egg, beaten
3 cups flour
1/2 cup sugar
2 tsp baking powder
1/4 tsp. salt
Cook the shredded potato in just enough water to cover it, for 10 min. Cool & drain. Combine cooled & drained potato with orange juice concentrate, water, marmalade, oil and egg. In a large bowl, soft together the flour, sugar, baking powder and salt. Add the liquid ingredients and stir just until combined. Spoon batter into 3 greased mini loaf pans and bake at 350° for 30-35 min. or until tester comes out clean. Cool in pans for 10 min. then remove from pan and let cool.

potato soup

very easy
potatoes about 8-10
1 large onion cut up
3 stalks celery cut up

boil all in till tender

drain

but in pan add milk and butter
salt and pepper

and heat til warm

very good and easy

do twice baked potatoes

microwave until done
make sure you poke

cook up sausage
greenpeppers onions
drain
--
cut up several scallions
shredded cheese

--
dig the potatoes out

mix all the ingredients

put in microwave to melt cheese

and have sour cream

well u could try to go down the itailn road and make potato nocci or u could try potato au gratin. it is up to u. just go on to foodnetwork.com and this web site will give you all the answers. or you can brows the web. or look into a cook book and the change it up a bit. maybe adjust the receipe and really spcie it up by putting in some red wine or any type of wine or beer or none at all or you can make all grown up it is all up to u. good luck. trust me on this u will thank me in the long run. i have had both of these dishe & i like them both.

dice up 6 cups of potatoes. add 16 oz of sour cream. add 1 cup of shredded Cheddar cheese. mix well in a bowl. put in casserole oven safe pan (greased) bake 350 for 30 minutes. yummy! you can add crushed potato chips or corn flakes after baking.

slice potatoes add sliced onions and fry them but sprinkle italian dressing mix over them as they fry.
