Boston Market Creamed Spinach-Yummy!
Description This is a CopyKat Recipe Original. With this dish you might even win over a few people to spinach :-)
Ingredients
1 20oz Package Chopped Spinach Frozen
1 C. White Sauce (Thick)
1/2 C. Sour Cream
1 tsp. Salt
2 Tbsp. Butter
2 Tbsp Finely Chopped Onion
1/4 C. Water
White Sauce
3 Tbsp. Butter
4 Tbsp. Flour
1/4 tsp. Salt
1 C. Whole Milk
Methods/steps
Prepare the white sauce using a medium low setting melt butter in a saucepan add flour and 1/4 teaspoon of salt until creamed together. Add milk a little at a time on medium heat. Constantly stir with a whisk until mixture becomes thick and smooth.
Place butter in a 2-quart saucepan on medium heat, add onions. Cook until the onions are transparent. Place spinach and add water to pan, lower the heat and place lid on pan. Stir several times until the spinach is almost completely cooked. Add 1 teaspoon of salt. When spinach is almost done add white sauce and sour cream, stir well and simmer until completely blended.

Well I never liked spinach until I ate this Artichoke and spinach dip
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup all-purpose flour
2 cups milk
Salt
Cayenne pepper
1/2 cup grated Parmesan (about 2 ounces)
1/2 cup grated Monterey Jack (about 2 ounces)
1 cup chopped onions
1 (10-ounce) bag fresh spinach, stemmed, rinsed and chopped
2 tablespoons chopped garlic
2 (15-ounce) cans artichoke hearts, drained and julienned
10 to 15 small corn tortillas, cut into fourths
Vegetable oil, for frying
Preheat the oven to 400 degrees F. Preheat the oil in a deep fryer.
Combine 1/4 cup of the vegetable oil and flour in a saucepan over medium heat. Stir the mixture constantly 5 to 6 minutes for a blond roux. Whisk in the milk and bring the liquid up to a boil. Season the liquid with salt and cayenne. Simmer the liquid for 5 to 6 minutes, or until the liquid is thick and coats the back of a spoon. Remove the sauce from the heat and stir in the cheeses. Set the sauce aside.
In a saute pan, heat the remaining 2 tablespoons vegetable oil. When the oil is hot, add the onions and saute for 2 minutes. Stir in handfuls of spinach at a time, until all the spinach is incorporated. Add the garlic and artichoke and saute for 2 minutes. Season the vegetables with salt and cayenne. Remove the vegetables from the heat and turn into a mixing bowl. Fold the cheese sauce into the vegetables. Turn the mixture into a baking pan. Bake the dip for 10 to 15 minutes, or until the top is golden brown.
Fry the tortilla chips, batches at a time, for about 2 to 3 minutes
For a salad, I like getting spinach, black berrys, mushrooms,bacon,fetta cheese, and blackberry vinegerette

You mentioned "spinach" I love it too..fresh or cooked. One of my favorite recipes is to combine a box of frozen spinach that is thawed out drained and squeezed dry....with cheeses and egg and stuffed into Italian pasta seashells baked in the oven with your favorite pasta sauce.
Here it goes:
Stuffed Pasta shells with spinach and cheese
Set oven to 375 degrees
boil a box of pasta shells and drain dry
In a large mixing bowl place 1 pint or larger Ricotta cheese
1 beaten egg for a pint of cheese or 2 if you double it
box of spinach thawed, squeezed dry
1/2 cup Parmesan cheese
dash of nutmeg
provalone and mozzarella cheese about 1/2 cup each
shred these cheeses
dash of salt and pepper
Mix these ingredients together and stuff in pasta shells
place these shells in oblong pan that has been oiled with olive oil. Pour your favorite pasta sauce over the shells and bake for about 45 minutes. cover with aluminum foil at first half of baking then uncover for the rest. Have some extra sauce ready to pass around..serve with a salad and Italian bread!

I love it in spanakopita ( spinach, fetta cheese &
