I love avocados!!! I make these things at home all the time:

- Tomato/ bacon/ avocado sammie.
- Curried chicken salad with mango chutney and avocado slices: take chicken, mayo and curry powder and combine. Spread mango chutney on a pita, add chicken and top with avo's.
- Avo and tuna: mix a can of drained tuna with soy sauce and sesame oil. Put on toast points and add sliced avos.
- Avocado ice cream: 3 avos, 3 cups milk, 1 cup heavy cream, 3/4 cup honey, 1 teaspoon salt, juice of half a lemon. Blend in blender (add heavy cream last) and make according to your ice cream maker.
- Avo smothie: 1 banana, half an avo, 1 cup milk, sugar to taste. Add ice if you like.
-Quesadilla: between 2 tortillas: cheddar, green onions, sliced tomatoes, sliced avos, cilantro leaves, season with cumin. Serve with sour cream and salsa.
-Omlette: fill an omlette with ham, cheddar, avos and salsa.
-Salad: grilled salmon, cubed avo, red onion, cilantro, lemon juice, tomato. Serve over greens.
-Appetizer: Tomato paste, avo slices and goat cheese on toast. I use anchovies too sometimes but thats weird to most people... but I like it!
-Sammie: Avo, cream cheese, smoked samon.

I hope you like some of these! I love avos and I really do make all this quite often. Feel free to edit any of these things as these are only rough guidelines and ideas!!!

Good luck with the avocado experiment! Oh, and tell them that avos are good for your cholesterol and skin! They lower the bad fat and raise the good fat in your cholesterol count.

Tropical Surprise Green Smoothie: Half pineapple 1 avocado 2 stalks celery Large handful of spinach leaves 1 piece of raw ginger Water and ice cubes to fill a (Vita-Mix) blender to 8 cups Optional: 1/4 to 1/3 cup of raw Agave nectar to taste if desired. In a (Vita-Mix) blender add & blend. --------------------------------------... Avocado Fudge Recipe: 1 ripened avocado ½ cup margarine 1 teaspoon vanilla 1 cup cocoa 3 cups powdered sugar 1/3 chopped walnuts (optional) In a medium sized saucepan, melt the margarine over low heat. Once margarine is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left. Return mixture to saucepan over very low heat and aff the rest of the ingredients, except the walnuts, adding the powdered sugar a portion at a time. Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan. Refrigerate until firm and once firm, slice it up into squares. --------------------------------------... I also use avocado instead of butter/margarine – as a sandwich spread and in baked potatoes. Use organic produce where possible. .

Deep Fried Avocado & Salsa

1 cup lager beer or ale
1 cup all-purpose flour
1 1/2 teaspoons paprika
2 cloves garlic, chopped finely
2 avocados
Vegetable oil as needed for deep-frying
Salt, as needed
1 cup purchased salsa

To make beer batter, whisk together beer, flour, paprika and garlic until well-blended. Let stand at least two hours.

Peel avocados. Cut each into 6 wedges. Dredge wedges in reserved beer batter. Deep-fry in hot oil until golden, about 3 minutes. Repeat with remaining wedges. Serve 3 wedges with 1/4 cup salsa.

Makes 4 servings.

One of my favorite ways is to slice them thinly, then squeeze fresh lemon over top and then a little fresh black pepper. It's delicious! You can also chop them and put them in a tossed salad, mash them and spread it on a sandwich or make homemade guacamole for dipping or with mexican food: take 2 ripe avocados, remove pit & skin, add 1-2Tbsp of salsa, some finely chopped onion, a squeeze of lemon and salt & pepper to taste. Mix it all up (while mashing the avocado) with a fork and serve with tortilla chips or on tacos or burritos.

Guacamole

an ex of mine (just happens to be 1/2 mexican) used to make a completely delicious guacamole....even my family liked it & they don't eat guacamole! there's not a particular measure to any of the ingredients so it's basically just to your taste. Peel & de-pit a few avocados, chop up some cilantro (optional but adds an interesting flavor), onion, tomato & a jalapeno (no seeds, that's what makes them super hot), add salt, garlic or garlic salt/powder (optional), a few squirts of lime juice (prevents the avocado from turning brown) & grate some queso fresco (a good white mexican cheese) into it. Mash it all up as much or as little as you like it (depends on whether you like chunky or not) & there ya go....yummmmy guacamole made fresh. Enjoy!!

Hi. I see there are lots of good ideas on here already, but here's mine. I love to dice an avacado and soak the pieces in soy sauce. The taste combination is awesome. Also, the secret ingredient for kickin guacamole is mayonaise. And avacados are also good on bagles with thin cucumber slices, cheddar cheese, cream cheese, salt, pepper, and stuff like red onions and tomatoes depending on what you like. Have fun, xoxoxo, Animal

My favorite way to eat avacados is in salad. I actually introduced them to my boyfriend by putting them in a salad. It's kinda sneaky if you make a full on salad (with everything) cause there is so many things in there.. :) Also, they are really good in sandwiches, like a turkey bacon sandwich with avacado. I've heard they are good plain with mayo. but that doesn't sound appealing to me.
