I am looking for something to make tonight for dinner for 4 people. I would love to have a recipe that has chicken in it, and maybe some kind of pasta. Any idea? No alfredo, please.

Saute chicken pieces in olive oil and garlic. Stir in a jar of pesto sauce. Toss with hot pasta and Parmesan cheese. Serve with crusty bread, a green salad and a good wine.

One dish that is always a winner at our house is "chicken and peppers" you can serve it with any pasta shapes....that has olive oil butter and parsley mixed in after boiling....

Saute seasoned chicken pieces enough for 4 people in a deep frying pan. I use garlic salt and black pepper for the frying step. Fry in olive oil.

Remove chicken from pan and set aside while you saute onions and peppers. I get a bag of peppers at save a lot store for 1 dollar and it' s mixed with red, yellow and green and the onions are included....

add a clove or two of garlic minced and cook until soft then put the chicken back in and add your favorite pasta sauce or make your own with tomato puree and tomato paste plus your Italian seasonings...such as oregano, basil and rosemary....just a sprinkle of each one....chicken bullion and water. bring up to a boil then turn down right away and simmer until reduced.

Leave uncovered on simmer. you want this to be more thick than thin. All depends on your taste etc.

Cook the pasta and have it warm and ready for the chicken and sauce serve with Italian bread and a salad...have parmesan cheese on the table for those who like it. Also if you like your food hot you can add red pepper flakes to the sauce just a few ..don't over do it or the guests will need lots to drink! lol

Super fast and easy. Get some boneless chicken breasts. Season chicken breasts to your liking (I like salt, pepper, garlic powder, oregano, parsley), and put them on the grill at a medium heat till the juices run clear.

While they are grilling, boil your pasta (I like angel hair) al dente. Drain pasta, and warm your sauce. I use any store brand for convenience sake. If you choose to make your own pasta sauce, I like tomato sauce, tomato paste, garlic, onions. Once sauce starts to bubble, toss the pasta in with the sauce and mix it around.

Once the chicken is off the grill and rested for 5 minutes, slice as thin as possible against the grain (like 1-2 millimeters). Use the chicken as a topping for the pasta.

Ta-Da. Dinner served in only 15 minutes. I do this all the time. Buy some salad and bread to go along with it, and the guests love it. Minimal clean up too (Grill just needs brushing, and you only use 1 pot for both pasta and sauce.)

Macaroni Grill Pasta Di Pollo

Pasta :
1/2 stick butter
1/2 C. red onions, diced
1/2 C. pancetta (Italian smoked bacon), drained and chopped
1 Tbsp. garlic, chopped
3/4 C. green onion, tops only
3/4 lb sliced grilled chicken
2 lb. farfalle (bow-tie pasta), cooked
8 oz. heavy whipping cream
1 Tbsp. chopped parsley

Asiago sauce :
4 C. heavy whipping cream
1/8 tsp. paste or dried chicken base
1 1/4 C. asiago cheese
1 Tbsp. cornstarch
2 oz water

Methods/steps
1. To make the sauce, heat cream to very hot and just bubbly (but not a boil).
2. Add chicken base and cheese.
3. Stir constantly with a wire whisk and bring temperature back to just bubbly.
4. Dissolve cornstarch in the cold water and add to sauce.
5. Bring to a slow simmer to cook out starch.
6. Transfer sauce to a container, cover and refrigerate until needed.
Pasta directions:
1. Sauté red onion in butter for a few seconds then add pancetta and garlic.
2. Add chicken, green onions and pasta. Deglaze the pan with the cream.
3. Add asiago cream sauce.
4. Heat thoroughly.
5. Garnish with parsley and serve

This is a very tasty pasta recipe where the sauce is not even cooked, so it goes together very quickly--most of the ingredients come out of a jar--but still has lots of flavor and is healthy. Penne Portofino (4 servings) --1/2 cup drained jarred roasted red bell pepper strips --1/2 cup very coarsely chopped pitted Kalamata olives --1/4 cup very coarsely chopped pitted green olives, your favorite type --about 6 thin slices prosciutto, sliced crosswise into strips, or dry salame, cut into strips (or leave out the meat altogether, if you prefer) --1/4 cup shelled pistachios (not the dyed-red kind), very coarsely chopped --2 teaspoons chopped fresh thyme --1/4 cup finely chopped parsley (a small handful) In a small bowl, stir together everything listed above. At the same time, heat a large pot of boiling, well-salted water to a boil. --2/3 of a pound dried penne pasta, preferably penne rigate --1/4 cup extra-virgin olive oil --juice of I lemon --salt and pepper to taste Cook the pasta in the boiling water until "al dente", neither mushy nor too firm. Drain well and place in a large serving bowl; immediately drizzle the olive oil over and toss, then the lemon juice. Add the pepper/olive mixture and toss again. Add salt and pepper to taste, toss one last time, and serve either warm or room temperature, with a green salad and some garlic toast. You can add grated Parmesan at the table if you want to, but I personally prefer it without. Buon appetito!

This chicken recipe is SO easy, my husband absolutely loves it! it goes good over white rice, i use a package of raw chicken tenders,

Tangy Chicken
6 skinless, boneless chicken breast halves
1 cup apricot preserves
1 (10 fluid ounce) bottle Russian-style salad dressing
1 (1 ounce) package dry onion soup mix
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Place the chicken breasts in a 9x13 inch baking dish. Combine the preserves, dressing and soup mix. Spoon mixture over the chicken and bake in the preheated oven for 35 to 45 minutes or until the chicken is done and the juices run clear.

Get 4 chix breasts and wrap each one in bacon and cook til the chicken is done. Remove from pan and add cream of chix soup and 1 c sour cream to pan. Heat up while scraping pan. Add back in the chicken and spoon sauce over each piece. serve the chicken with the sauce over pasta. Bow ties would be good. Really tasty and pretty fast and easy.

Just saute' the chicken with some chopped onions, stir in a jar of spaghetti sauce and serve over the pasta.

Chicken Parmasan

1. Bake or Pan fry boneless chicken breasts
2. Top with heated spaghetti sauce
3. Melt mozzrella chesse on top
4. Serve with spaghetti and Garlic Bread

1 can cream of chicken soup
1 lrg can of chicken - or 2 chicken breasts cooked and shredded
1 cup milk
2 cups shredded cheddar cheese
1/4 cup sour cream
1 tube of buscuits

mix everything except the biscuits in a 9x13 baking pan - you may need to adjust the amounts of the indregients to adjust how thick you want it (I like mine thicker so I usually add more sour cream)

bake the biscuits on a separate sheet while baking the chicken mix for about 15 minutes

serve with chicken mix over biscuit
