Spaghetti and meatballs with grilled garlic bread is on my menu for this evening.

Had shrimp & crap with linguini (homemade of course)for lunch... can you tell I am a pasta lover... ?? Really pasta is soooooooooo cheap so I make many meals with many different varieties of it.

Diane's Chicken
6 halves chicken
2 T lemon juice
1/2 t garlic powder
1/2 C. mayo
1/2 t salt
1/2 t pepper
Mix together:
3 C. crushed cornflakes
1 C Parmesan cheese
Spray cookie sheet. Cover with foil. Baket at 375 degrees for 45 minutes.

Also have baked potatoes & salad.

for desert I will probably have something like:

Sugar Cookies
Cream 3/4 cup sugar and 1 stick oleo. Add 1 egg and beat. Sift 1 1/2 cup flour, 1/2 tsp baking powder, 1/2 tsp salt, and add to creamed mixture. Add 1 tsp vanilla. Make in balls size of a walnut and roll in sugar. Bake 350 degrees until light tan. Do not over bake.

Tonight is garlic night. I take a small bowl and put in about 2 tablespoons of olive oil and about 2 tablespoons of water, whisk it together to make an emulsion. Sprinkle with garlic powder, however much you like, a dash of salt, and a couple of tablespoons of dried parsley. (You can use fresh parsley, but then don't put it in until you add the fish.) Then I take a large potato, slice it thin and put it into 3-liter microwave casserole dish, and pour the emulsion over it. I microwave it until the potato begins to soften. I stir in about a half-cup of frozen veggies, usually corn or green beans, sometimes mixed veggies (carrots, corn, lima beans, green beans, and peas OR broccoli, cauliflower and carrots), and nuke again until the veggies are hot, but not yet completely cooked. Then I stir again and top with a piece of frozen garlic butter grilled fish fillets, nuke the whole thing until the fish is done. Add a serving from a bagged salad, a little oil and vinegar dressing and, voila! Very little in the way of dishes, and a fairly nutritious, one-person meal.

I roasted a whole ham last night. I packed most of the leftovers away, but I saved a nice chunk of meat to cube. Tonight I'm soaking beans for a ham and bean soup to cook up tomorrow night. That will give me tomorrow's evening meal, with a salad, a whole-wheat roll and an apple and some cheese for afters. And I can freeze a bunch of eight and 12 ounce containers of soup for quick hot homemade meals.

CHATEAUBRIAND (with baked potato, salad and Merlot)
Recipe is below.

(10 oz.) (2 lb.) (4 lb.) FAVORITE!!
Oven Baking:
For a 4 lb. Tenderloin roast: Preheat oven to 425 degrees. The high heat is needed to develop a brown exterior. Season thawed roast with cracked pepper and salt or with steak seasoning. (Make certain that roast is thawed thoroughly. This will take 2 days in the refrigerator for a 4 pound roast). Place on a broiling pan or in a roasting pan. Roast uncovered in the oven 50-55 minutes for a four pound roast. (Remove from oven when the internal temperature reads 130 degrees F. After 15 minutes resting time, internal temperature will rise 5 degrees to 10 degrees F. to approximately 135 to 140 degrees F. which would be medium rare.) Serves 8-12.

For a two pound roast: Roast uncovered in the oven for approximately 38 to 40 minutes or until the internal temperature reads 130 degrees F. Let sit for 5 to 10 minutes. Final internal temperature will rise to 135 degrees which is medium rare. Serves 4-6.

For a 10 ounce chateaubriand: Roast for 18 to 20 minutes or until the internal temperature reads 130 degrees F. (For medium rare). For broiling 10 oz., allow 7-9 minutes per side. Serves 2.

here is a great dessert and dinner recepie. ok you want to start by buying a pillsberry roll out pie crust then cut up apples ( red apples are the best kind to use ) into llittle bit size peices, put them in a bowl. then put alot of cinnamin and sugar all over them and toss them and stir them. put your bottom bace in the baking pan then fill it up with your apples that have been tossed and tirned. then put your top bace on there. put it in the oven at 350 degrese.
keep it in there for about.......20 to 30 minutes or intil brown. now the main cores. your going to need short noodles and some american cheese. first boil the noodles ontill there pretty soft and add the cheese. once there to the cheesey goodness you want take them off the stove and serve them then after that serve your pie with some vanella ice cream or some cool whip.

Make a Mexican feast...tacos (super easy and use ground turkey ), beans and cheese, lettuce onions , and some taco shells !!

It's SOOO easy to make and everyone loves taco's
fix it so you have all the ingredients on the counter and they can stuff it themselves however they like it!

go to the fabric store and buy mexican design cheap end of roll
stuff.

I did this with mine and i found that I wasn't slaving over the stove, I made the meat ..chopped everything , sliced everything the day before and had most of it prepared . for extra fun go to the dollar store and get cheap mexican looking bowls and plates!!

I made it fun and they were so impressed with the smells they still talk about it !!

It was so worth it !

When my husband and I are in a pinch or just can't think of anything we brown a pound of ground beef, boil some pasta (any kind will do), and a jar of Ragu cheese sauce (cheddar or alfredo sauce) and we mix it all together. It tastes like cheeseburger macaroni, like hamburger helper!

It's a toss up. I'll make green chile chicken or baked spaghetti. I'm leaning towards the baked spaghetti cause i'll make a salad to go with it and have some soft french bread too. Yep that's it. Thanks for helping me decide.

Black beans and rice with diced onions, hamburger meat,sweet red peppers, a teeny touch of garlic salt, and whatever else comes to mind.....good luck
