I'm making themed nachos for the super bowl. Blue and white chips for Indy and Blue and orange (doritos) chips for Chicago.

My favorite nacho recipe: Velvetta Jalapeno Hot cheese, melted (don't foget to add milk so it doesn't stick as much). Burger, onions, green pepper, jalapeno's, lettuce, tomatoes, sour cream, olives and of course, salsa. Your chips are a great idea with the color scheme! Chop up all your veggies. Put chips on oven save serving platter. Heat oven to 250. Fry burger until done. Drain. While burger is frying, melt cheese in sauce pan. After burger is done, put on top of chips. Put in oven for 15 minutes or so to heat up chips. Take out of oven. Pour melted cheese over top and decorated as you wish with the toppings. You could go with the yellow cheese for the Bears and a hot white cheese for the Colts. For another way to is to have your guest make there own nachos by keeping the cheese and meat warm and they can put what they like and don't like on it. Note: Chile and refried beans are also good with this. I hope your party is a success!

Pretty creative. Depending on how courageous your guests are, you can make a variety of different cheese based sauces. One of my favorite cheese dips includes cream cheese, green chile, diced tomatoes, and onions. A gourmet cheese dip that I love includes a gorgonzola cream mixture. Or, you could just go basic with some Velveeta mixed with your salsa of choice for a nice Con Queso sauce. Check out foodnetwork.com for some great recipes.
