I love potato soup both the creamy kind and the brothy one with lumps.

I like my potato soup with a few lumps. A few chunks of potato and small (very small) pieces of ham and bacon. Also with a creamy texture. My favorite recipe is when I make basic escalloped potatoes (you know, the one with white sauce), I have those the night before. Then, the day after, I put the leftover in my blender and puree until thick with no chunks. I boil a few potatoes just to fork tender, drain, dice add to mixture. 1 C. of chicken broth, 1/2 C of milk or half and half, your ham, bacon, chives, cheese, sour cream... whatever you like in it. Don't forget the pepper! It taste very good and it doesn't take all day. Hint: celery and carrot is also very good in small pieces as long as it is andante'

Yummy! Mine has bacon bits, cheese, chives and sour cream. Like a baked potato with the works!!!
