I love that the first answer didn't have any Chinese recipes in the answer. Well done my friend.

Chinese curry chicken usually uses curry power as the source of the curry. Like any Chinese "stir fry", cook your chicken and vegetables on high heat. Add your curry powder to taste. Add some chicken stock or water and thicken with a corn startch slurry (if you want sauce with it). Season with salt and pepper and add a little red pepper flake for some heat.

Classic and easy (REAL) Chinese cooking. Just like my Grandma makes.

Indonesian Chicken Coconut Curry

1 chicken, cut into chunks
1 Tbsp. chili powder
1 Tbsp. curry powder
1 Tbsp. turmeric powder
1 tsp. cumin
3 cloves garlic, chopped
2 onions, chopped
2 tomatoes, roughly chopped
1/2 cup chopped cilantro
2 Tbsp. oil
1 tsp. sugar
1 1/2 cup coconut milk
Salt and pepper to taste

Heat oil in big pot and fry onion and garlic for 1 minute. Then
add the chicken and continue cooking for 3 minutes. Add all the
spices. Stir everything together for a few minutes. Add the rest
of the ingredients. Adjust seasoning and serve with steamed rice.


BURMESE CHICKEN CURRY

1 kg chicken drumsticks or thighs
2 large onions, roughly chopped
3 large cloves garlic, peeled
5 cm piece ginger, peeled
2 tablespoons peanut oil
1/2 teaspoon shrimp paste or 3 tablespoons fish sauce
1 teaspoon salt
2 cups canned coconut milk
1 teaspoon chilli powder (optional)

Wash the chicken and dry with paper towelling. Place onion, garlic
and ginger in a food processor and process until smooth. Add a
little water, if necessary.

Heat the oil in a pan and add the onion mixture. Add the shrimp
paste or fish sauce and cook over a high heat for five minutes,
stirring. Add chicken and cook over a medium heat and turn until
brown.

Add the coconut milk, chili powder and salt. Bring to the boil
and simmer, covered, for 30 minutes. Stir occasionally. Remove
cover and cook for 15 minutes or until chicken is tender.

Serve with noodles or rice.
