This happens both in metal and glass pans, at different temps. The baking tastes fine, and has a good texture, but just doesn't rise.

My poor chicken is frying - coated and everything - when I turned it - it started bleeding. I cleaned them and everything!!! Did I do something wrong? Will the cooked bleeding be bad to eat?

Hi,

This evening (for the second time ever) I tried making a stirfry using tiger prawns instead of meat or tofu. I started off with a basic stirfry: sweet potato, sweet peppers, onions, and uncle ben's sweet&sour sauce. I had a tub of cooked&peeled tiger prawns, which I threw into the wok about 7-8 minutes before serving, long enough for them to heat up properly.

Yet again the prawns ended up shrunken and rubbery (the first time I fried them in garblic&butter before adding to the wok, was even worse!!).

What am I doing wrong- perhaps I should try the same approach but with raw prawns??

thanks

Okay, so I'm bored of making the usual food (meaning frozen food) I don't want to cook right now because I'm too lazy, so I wondered if there were any recipes I could use that is quick and easy. It also has to be easy to eat because I can't eat much right now, there are things in my mouth and I can't eat hard foods or sticky foods. And it would be nice if the recipe is slurpable!!! LOL =)!

I really want to get into fish, but the fishiness flavor really freaks me out and has turned me off to it. Any suggestions of good fish to start with? Or even good things to put with the fish in order to mask any fishy flavor.....

I like a thick sauce, but for some reason this time my sauce came out way too thick! Is it okay to add water to it?

My 1st fudge following this Hershey's Rich Cocoa Fudge recipe.
http://www.hersheys.com/recipes/recipes/detail.asp?id=5303&page=1&per=10&keyword=cocoa%20fudge

Appeared OK, looked ok, family liked it, quite a sugar/chocolate rush.
Q's:
Attempting to reach 234 F temp was a struggle.
Skimped on the Saucepan size -- used 3qt instead of 4qt (not intentionally)
Result: The lava-like slow bubbling approached the ridge. To keep it from overflowing, I lower fire --resulting in a reduced boil, but also reduced temp Increase flame yielded overflow threat again.

Did this a couple of times, -- a yo-yo- effect on the boiling glob.
Near end of this exercise, I put fhe flame High -didn't come up to rim this time & temp didn't increase further.
Didn't reach desired temp at this time but thought I might have hit it during the yo-yo effect -- or missed it by 1 or 2 deg's
Q1) Had I not reached temp, would it have set up properly ?
Q2) Did yo-yo have effect on quality ?

Thank YOU

Hubby and I are in Phase One and it's going great, but the desserts in the book aren't that great. I have a recipe for Chocolate Mousse that I love, but Hubby wants peanut butter fudge. Any ideas for something that will work to satisfy him? Thanks so much.
