If you know you will only be using a small amount, the option of freezing the remainder exists. Because you have opened the jar, it will likely not last more than a week, as the air trapped in the jar will cause it to go bad. Buy some small disposable plastic containers (freezer proof) or freezer Ziploc bags and put the remainder of the sauce in the container or bag and freeze. You should do this immediately after you open the jar, don't wait a week and then freeze it. This should last about three months in the freezer.

If you are using sauce that was bought what i have started doing is buying a small bottle this way you don't have to worry about the remainder. But there are some sauces that only come in larger bottles, when i open the jar I will bag the rest immediately and freeze it. You can also try the sauces in pack that you get a powder and mix from korrs. These are usually good for a 16oz pack of pasta so there are no remainder to worry about.

Yes. Freeze any leftovers in a seal tight container. I say seal tight because if air gets in then you'll have freezer burn. I you have one of those vacume seal machines, then you can easily seal up the sauce and it will last longer that way in the freezer becuase that's totally air tight.

I freeze mine in ice cube trays-then I put the cubes in Ziploc bags and 2-3 of them is just right for one serving, depending on how hungry you are or if you're adding other stuff.
