It is perfectly fine to add water to it, if you add to much, just let it simmer down. If you want more flavor (Because water isn't known very well for its flavor) add a broth (beef works well here(beef broth that is)) you could also add a little tomato juice from canned tomatoes. Also, try not to cook it more than three to four hours because all that steam is water leaving the sauce, therefore making it thicker. You could also try leaving the top on the pot as you cook, just make sure not to open it very much but do stir it and most importantly DONT LET IT BOIL! The pot lid will add more heat so turn the temp. down a little bit if you try this
