This is the recipe that I've been using for over 20 years...

BANANA BREAD:

1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 to 4 medium)
1/3 cup water
1 2/3 cup all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped nuts

Heat oven to 350 degrees. Grease bottom only of loaf pan. 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and margarine in 2 1/2-quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 8-inch loaf 1 1/4 hours, 9-inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.


*Do not use self-rising flour in this recipe

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting


Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
In a large bowl, combine the flour, baking soda, and salt; set aside.

Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.

Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.

Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.

One-Pan Banana Nut Bread

1/3 c vegetable oil
1 ½ c mashed bananas
½ tsp vanilla
2 1/3 c Bisquick
1 c sugar
½ c chopped nuts

Preheat oven to 350 degrees. Beat all ingredients together vigorously. Pour into well greased loaf pan. Bake 55 to 60 minutes. Turn out on rack to cool.
[If you don’t have ripe bananas, place 2 or 3 bananas in the freezer. They will turn black after a day or so. This means the sugars have developed. Remove and defrost- they will probably be a bit mushy. Use them in this recipe.]

Banana Nut Bread
1 cup flour
1 cup whole wheat flour
11/2 teaspoons baking powder
1/2 teaspoon baking soda

5 tablespoons butter
1/4 cup buttermilk
1 teaspoon lemon juice
5 large bananas
1/2 cup sugar
1/4 teaspoon salt
1 cup pecan or walnut halves

Preheat oven to 350 degrees F. Grease and flour a 9 1/2 by 5 1/2-inch loaf pan.
In a large mixing bowl, sift flour, whole-wheat flour, baking powder, and baking soda. Reserve.
In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.
Mix or blend until smooth. Slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean

Easy Banana Nut Bread Recipe

1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed bananas
2 cups flour
1 teaspoon baking soda
1/2 cup walnuts
1/4 teaspoon salt

Mix butter and sugar until well blended.
Add remaining ingredients.
Pour into loaf pan.
Bake at 350 degrees for 40-50 minutes or until cake tester comes out clean.

Best Banana Bread - 350 degrees, 55 to 65 min.
2 cups all purpose flour

1/2 tea. baking soda
1/2 tea. salt
1/4 tea. cinnamon
3/4 tea. vanilla
2 beaten eggs
1 1/4 c. mashed bananas (3 medium)
3/4 c. sugar
1/2 c. salad oil
1/4 c. chopped nuts

Grease bottom & sides of 8 x 5 x 3" loaf pan. Combine flour,
baking powder, soda, salt & cinnamon. Make well in center, set aside. Combine eggs, bananas, sugar, oil and vanilla. Add egg mixture all at once to dry mixture. Stir just til moistened (should be lumpy); fold in nuts. Bake until toothpick in center comes out clean. Cover with foil last 15" to prevent overbrowning. Cool in pan 10". Remove from pan & cool completely on wire rack. Wrap & store overnight before slicing.

Banana Blueberry Bread:

1 cup all-purpose flour
1/2 cup whole wheat flour
3/4 cup uncooked quick-cooking grits
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3 tablespoons canola oil
1 cup mashed ripe banana
3/4 cup blueberries
2 large eggs, lightly beaten
Cooking spray

Preheat oven to 350°.

Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, grits, sugar, salt, baking powder, and baking soda in a large bowl; make a well in center of mixture. Combine oil, banana, blueberries, and eggs; add to flour mixture. Stir just until moist.

Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° 1 hour or until a wooden pick inserted in center comes out clean. Cool bread in pan 10 minutes on a wire rack. Remove bread from pan, and cool completely on wire rack.

Yield: 16 servings (serving size: 1 slice)

I've made all of these and they are all great.


Cabana Banana Bread

½ cup butter, softened (1 stick)
2 csup firmly packed light brown sugar
4 med. size ripe bananas, mashed
4 eggs
½ cup veg oil
1 cup pineapple yogurt
½ cup crushed pineapple, very well drained
1 tsp. vanilla
½ tsp. coconut extract
3 cups.flour
2 tsp. baking soda
½ tsp. salt
½ cup shredded coconut

Oven at 350
Cream butter and sugar till light and fluffy. Beat in bananas, beat in eggs one at a time. Blend in oil. Mix in all remaining ingred. except coconut. Divide batter between tow greased loaf pans. Sprinkle coconut evenly over tops of loaves. Bake 50-60 mts. Let cool 5 mts before removing from pans.

Irresistible Banana Bread
Rich buttermilk, crunchy nuts and flavorful, ripe bananas make this banana bread tops.

1 1/4cups sugar
1/2cup butter or margarine, softened
2eggs
1 1/2cups mashed very ripe bananas (3 to 4 medium)
1/2cup buttermilk
1teaspoon vanilla
2 1/2cups Gold Medal® all-purpose flour
1teaspoon baking soda
1cup chopped nuts, if desired
1teaspoon salt


Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.

Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.

Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Whole Wheat Banana Bread

3 cups flour (2 cups WW and 1 cup white A/P)
1½ tsp baking powder
1½ tsp baking soda
½ tsp salt
2 cups sugar
2 eggs
½ tsp. vanilla extract
1 cup chopped nuts (walnuts, pecans)
1½ sticks butter
1 + 1/8 cups buttermilk
1½ cup mashed bananas

Add all the wet ingredients and beat by hand (I like to hand mash and beat). Then add dry ingredients and mix.

Bake at 350ºF, can use a variety of pans, and works well too with small muffins and small loaf pans. Bake for probably 20-30 minutes but may vary. Just keep an eye on when it looks right to you.
