I see lots of recipes using heavy cream or buttermilk, I'd like to incorporate the cream cheese or sour cream instead. Any good ideas or advice?

I am making sweet potato pies from scratch and I want to know the best way to make it the ingrediants I already have are sugar,evaporated milk, dark brown sugar, vanilla extracts, ginger, butter, and eggs! All I need to know is how do you make it should peel the potatoes first than cook them or should I wait until they are done to peel them? Also I want to make some slammin candied yams but I am using the kind in the can and I want to add marshmellows how do I do this this meal has to perfect because people are tryna doubt my skillz and I want to shut them down and I need you guyz help.by the this not a BLACK thing because WHITE folks I know you guys can burn in the kitchen too so I welcome your answers as well with a soul food twist!! And LAST BUT CERTAINLY NOT LEAST HAPPY THANKSGIVING EVERYBODY!!!!!!!

For years my mother used to thaw a turkey on the tops of the tiles on our counter in the kitchen because she said it would thaw faster. Years later (when i had my own place) It was my turn for Turkey day, I did not think about it, and let my bird thaw on the wood cutting boards in the kitchen....Bird took 4 days to unthaw!
Anyone heard of this "Myth" (if you will) ??

I put a 14 lb turkey in at 5 am and its now 930 or so it looks done and smells done what is the ratio to cooking something like 25 mins for each pound that makes it 7 hours right?? or am i just too tired and miscounting?? my mind is not functioning please help and no rude comments please my brain cannot take it!!

We have family from overseas coming for Christmas. There will be 20 of us in total so we have decided to do a buffet instead of the traditional turkey dinner.

I am looking for some sensational recipies for cold christmas buffets - to add to a table of cooked meats, homemade quiche, and the usual sausage rolls/cheese straws etc;!

I need things that I can start to make up a day or two in advance or things that can be frozen.

Tried and tested ideas only please - I don't want any disasters!
