Whenever I make rice it either ends up uncooked or overcooked and mushy. What is the proper procedure and what sort of rice should I choose for something like the consistency I would get in a chinese restaurant?

Yes, I know it's small, but it's just for my husband and myself this year.
And yes, I know this is pretty last minute. Any help would be wonderful.
I estimate about an hour and a half to two hours. Am I close?
I'm planning to cook it with celery, onions, butter, and chicken broth, and then sprinkle it with salt, pepper, and garlic.

Ok, so here is the thing... I promised my husband that this year I would make him homemade Cranberry sauce. I have to recipes for it, just not sure about either. I'm a great cook/baker, just have never made cranberry sauce before, so sorta scared. Well the first recipe has a cinnamon stick and orange zest in it, which I would love to make. The thing is, it doesn't call for water, while the other one calls for water and about a 1/2 cup more of sugar. I was wondering if you had any suggestions on what I should do or If you had a really good Cranberry sauce recipe...If this helps I have 2-12oz bags of Fresh Cranberries and I DON'T have any port or ginger....So PLEASE help..Thanks

I am having Thanksgiving tomorrow. I've never hosted, and believe it or not I've never made mashed potatoes from scratch. I found a good recipe, but I am taste testing them and they taste dry. I boiled the potatoes in chicken broth, then added sour cream, cream cheese, and butter. I will be refrigerating them and baking them tomorrow, and adding chives. Should I add milk or something? I have no leftover broth. Thanks for any help!
