The red button pops out when it's done. you may want to cook yours longer, but that's the minimum. Keeps you from serving your family a underdone turkey.

It lets you know when the turkey is done it pops out when the Turkey is finished cooking, sort of like a timer

When all else fails, read the instructions. If you dod you would know that that id the little tepm gauge that will pop up when tom is done.
