A 12lb turkey should take approximately 3 hours to cook.

I would cover in aluminium foil and ensure that the turkey has a good coating of butter rubbed into the skin to ensure the turkey does not dry out, and baste (pour the melted butter and juices) over the turkey during the cook time.

No you do not need to turn the turkey.

Enjoy!!

Make sure that it is thoroughly thawed!! 6-7 hours in room temp water. Get the giblets out. Rinse out inside.
Coat with butter or oil (I use olive) and spices (oregano and salt for me).
Heat oven to 325 F.
I use the broiler pan. I wrap the turkey in foil, leave a small opening, and put juice (I used Chai tea) in and outside. Place in oven. More juice added first and second hour.
Do three hours.
Turn off oven, open door, and let cool 45 min.
Carve and serve.
I did it yesterday, a 12 pounder, ate some last night,
very tender!
Good luck!
