This is that fake Neiman Marcus cookie recipe, but it makes an absolute WONDERFUL cookie. They take a little bit extra time in preparing, but they are well worth the time.
(Recipe may be halved):
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal**
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
** Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees. Makes 112 cookies.

Peanut Butter Sandwich Cookies
1 Cup Butter
1 Cup Creamy peanut butter
1 Cup white sugar
1 Cup packed brown sugar
1 Teaspoon vanilla extract
3 Eggs
4 Cups all-purpose flour
2 Teaspoons baking soda
1/4 Teaspoon salt
Filling:
1/2 Cup creamy peanut butter
3 Cups confectioners' sugar
1 Teaspoon vanilla extract
5-6 Tablespoons milk
In a mixing bowl, cream butter, peanut butter and sugars. Add vanilla. Add eggs one at a time beating well after each addition. Mix flour, baking soda and salt in a separate bowl. Add to mixture in mixing bowl. Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten with tins of a fork. Bake at 375 degrees for 5-6 minutes (important so that you don't over bake!!). Remove from oven and leave on cookie sheet for 2-3 minutes to allow the cookies to continue absorbing the heat from the cookie sheet. They should be slightly brown on the bottom. Cool on wire racks. In a mixing bowl combine and mix the filling ingredients until smooth. Spread on half of the cookies and top each with another cookie. Yield 5 dozen.

1 1/4 cups brown sugar, firmly packed
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 to 3 cups semisweet chocolate chips
PREPARATION:
In large mixing bowl cream butter and sugars until light. Beat in the eggs and vanilla.
Sift together the flour, salt baking powder, and soda; stir into the first mixture, blending well. Stir in chocolate chips. Shape into balls about 1 1/2 inches in diameter and place 2 inches apart on an ungreased cookie sheet.
Bake in a preheated 350° oven for 8 to 10 minutes, or until edges are light brown.
Makes about 4 to 5 dozen cookies.

I have 2 favorites:
First
Butter Cookies
1 c. softened butter (no margarine)
1/2 c. sugar
1 egg
3 Tblspn. vanilla
Sift together
3 c. flour
1.2 tspn. baking powder
Then mix the two together
Bake at 425 for 5-7 minutes
When those are cool ice with cream cheese frosting
6 oz. cream cheese
1/2 c butter
2 tspn vanilla
4-5 c. powdered sugar
Cream together first 3 ingredients, then gradually begin adding sugar till it reaches the consistency you desire.
Second
Dishpan cookies (easy and great for large groups of people)
4 c. flour
2 c. oil
4 eggs
2 c. brn sugar
2 tspn baking powder
2 tspn baking soda
2 c. coconut
1 1/2 c. oatmeal
4 c. cornflakes
1 c. nuts
6 oz. chocolate chips
Mix together all ingredients, drop in 1 inch balls on a pan and bake for 6-10 minutes at 325 degrees.

Almond-Toffee Chocolate Chip Cookies:
Prep: 30 min., Bake: 14 min. per batch
3/4 cup butter, softened

2 1/4 cups plus 2 tablespoons all-purpose flour

1 cup semisweet chocolate morsels
1 cup almond toffee bits
1/2 cup slivered toasted almonds
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.
Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.
Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
Yield: Makes about 5 dozen
