My dad has asked for "Chopped Steak" for lunch on Father's Day. Is this a cut of meat or just ground sirloin formed into patties? I'm a fairly experienced cook but have been unable to find out exactly what it is I'm looking for. Thanks!

Although I'm not a bad judge of when a canteloupe or honeydew melong is ripe for eating, I have practically no experience in testing watermelons. Does the same "finger-press" technique apply? Thanks very much for your help!
