The best peanut butter cookie recipe is found in a cookbook called, oddly enough, "The Best Recipe." Seriously. The book is by the people who put out Cook's Illustrated magazine. The "secret" to the recipe is adding chopped dry roasted peanuts. If you already have a decent recipe, try adding the peanuts, use butter NOT margarine, and DO NOT OVERBAKE THEM!!!! This is absolutely essential - they should look like they're not quite done. Cool on the pan for a few minutes before moving to a rack.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, at room temperature
1/2 cup solid shortening, at room temperature
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 cup creamy peanut butter
Heat oven to 350°.
Sift together the flour, baking powder, baking soda and salt, set aside.
Cream the butter, shortening, and both sugars in a large bowl with an electric mixer at medium speed until light and fluffy.
Add eggs one at a time, beating well after each addition, then mix in the peanut butter.
Add the flour mixture by the cupful and beat at low speed to mix well.
Shape the dough into 1 inch balls and place on ungreased baking sheets (I line the sheets with parchment paper) about 2 inches apart.
Press each cookie twice in each direction with a lightly floured fork to make a crosshatch design.
Bake 10-12 minutes.
***Do not overbake--they will still be a bit pale, but if you overbake, they won't be chewy on the inside.
***Use a spatula to transfer to a rack to cool.
This makes a batch of about 60, so you might want to adapt as necessary

go to www.allrecipes.com and do a search for peanut butter cookies. then pick the recipe that comes up with the highest star rating/best reviews. if a couple hundred ppl give something a thumbs up, it's always fabulous! I use that site all the time.

No matter what recipe you wind up useing, I have found that if you use natural Peanut butter in it they will taste better, and use a little extra than the recipe calls for.

Well, I have a recipe that doesn't make a ton of cookies, and I think they taste pretty damn good, considering the ingredients
1 c peanut butter
1 c sugar (white)
1egg
Sounds odd, but try it! it's good for when you want some cookies, and you don't have all the extra stuff.

INGREDIENTS:
1 (14 ounce) can sweetened condensed milk
3/4 cup peanut butter
1 egg
1 teaspoon vanilla extract
2 cups buttermilk baking mix
1/2 cup white sugar

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat condensed milk, peanut butter, egg and vanilla until smooth. Add biscuit mix, and mix well. Chill at least 1 hour.
Shape dough into 1 inch balls. Roll the balls in sugar. Place 2 inches apart on ungreased baking sheets. Flatten balls slightly with a fork.
Bake for 6 to 8 minutes, or until lightly browned (DO NOT OVERBAKE). Cool. Store in a tightly covered container at room temperature.
