Ingredients:
1 box (about 18-1/4 oz.) yellow cake mix with pudding in the mix
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
3/4 cup Hellmann's ® or Best Foods ® Real Mayonnaise
3 eggs
2 cups shredded carrots
1 can (8 oz.) crushed pineapple, drained
1/2 cup chopped walnuts
Cream cheese frosting or whipped cream (optional)
Instructions:
1. Preheat oven to 350°. Grease and flour two (9-inch) round baking pans*; set aside.
2. In large bowl, with electric mixer on low speed, beat cake mix, cinnamon, nutmeg and ginger until blended. Add Hellmann's ® or Best Foods ® Real Mayonnaise, eggs, carrots and pineapple; beat 30 seconds or until moistened. With mixer on medium speed, beat 2 minutes. Stir in walnuts. Pour into prepared pans.
3. Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire rack, cool 10 minutes; remove from pans and cool completely. Just before serving, frost cake.
*Or, prepare cake mix as above in 13 x 9-inch baking pan or Bundt pan.

I do believe this is it:
Ingredients:
1 510 g package pudding included yellow cake mix
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp
ground ginger
3/4 cup Hellmann's mayonnaise
3 eggs

1 can crushed pineapple, well drained
1 cup chopped walnuts
Directions:
Spray 13X9-inch baking pan with No Stick cooking spray.
In a large bowl combine cake mix, cinnamon, nutmeg, ginger, mayonnaise, eggs, carrots and pineapple. With mixer at low speed, beat 30 seconds or until moistened. Increase speed to medium;beat 2 minutes. stir in nuts.
Pour into prepared pan. Bake in a preheated 350*F. oven for 30 to 35 minutes. To check doneness, touch cake lightly in the center. Cake springs back when fully baked. Cool pan on wire rack. Frost with cream cheese frosting.
Chream cheese frosting:
In a medium bowl, combine 1/2 cup softened cream cheese, 2 cups icing sugar, 2 Tbls. softened butter, 2 tsps. lemon juice and i tsp. vanilla extract. Beat until smooth.
Makes twelve servings Sorry, no coconut in this recipe. You might try sprinkling coconut over cream cheese frosting. For moister, richer cake from a mix, prepare 510g pudding-included cake mix using 1 cup water, 3 eggs and 1 cup Hellmann's Mayonnaise

2 large Eggs
1/2 cup Oil
1 cup Honey
1/2 cup Lowfat yogurt
2 cups Whole wheat flour
1/4 teaspoon Salt
1 1/2 teaspoons Cinnamon
1 teaspoon Baking soda
1 teaspoon Ginger
2 cups Grated carrots
1 Orange rind, grated
-----LEMON ICING-----
1 stick Butter, softened
1/4 cup Honey
1 teaspoon Vanilla
3/4 cup Skim dry milk
1/4 cup Lemon juice
1 Lemon rind, grated
Directions:
Preheat oven 350~f. Beat eggs in a large bowl. Add oil, honey, and yogurt, mix well. Add flour and mix well. Next, mix in salt, baking soda, cinnamon, and ginger. Finely stir in the carrots and orange rind. Butter and flour a 9 inch mold and pour in your batter. Bake for 30 minutes. When cake is done, reverse mold onto a platter and gently tap the bottom until cake loosens. To make a sheet cake double the reciepe and use a 9 by 13 inch baking pan. Watch cooking time carefully, cool and frost with lemon frosting.
Lemon Icing: Cream the butter, honey, and vanilla togather in a bowl until blended. Sift in the powder milk a bit at a time, stirring well after each addition. Alternate with the lemon juice until both ingredients are added. Stir in lemon rind and beat until icing is smooth and creamy. If neccesary add more juice or milk to thin. Makes 1 to 1 1/2 cups of icing. Double the reciepe for a two layer cake.
