I'm a purist. I like my halibut lightly floured on each side and sauteed in butter or Olive oil. I like to sprinkle a little dill on the fish and salt and pepper to taste. This is simple and delicious. You can also stem your fish in a Chinese steamer -- you know the bamboo kind. Place water in a wok, along with a little soy sauce. sliced ginger and Mirin cooking wine. Place green onions along the top of the bamboo basket. Lay fish on top and put steam top on. Place basket in seasoned boiling water and allow to steam for just a few minutes, or until the fish is flaky an tender.

Fresh Herbed Halibut

"This recipe is awesome for fresh halibut - fresh herbs, lemon and dill spice the fish without overpowering the taste while remaining healthy and satisfying!"
INGREDIENTS:
1 (2 pound) halibut fillet
1 large lemon, quartered
1 cup olive oil

1 teaspoon sea salt
1 teaspoon garlic powder
1 tablespoon dill weed
DIRECTIONS:
1. Preheat the oven's broiler and coat a baking sheet or broiling pan with olive oil.
2. Rinse the fish and pat dry. Place on the greased pan, and brush with olive oil or coat with olive oil cooking spray. Squeeze the juice from the lemon wedges over the entire fillet, and season generously with salt first, then garlic and finally dill.
3. Broil for 15 to 20 minutes in the preheated oven, until the fillet is opaque and can be flaked with a fork. Broiling time may depend on the thickness of your fillet.

First put real butter in the bottom of your fry pant and heat the pan up...why you wait salt and pepper the halbut and just a dash of real garlic and some chopped green onions...Now that the pan is good and hot,put in the the green onions and turning then alot and after 2 minutes put the halibut in the fry pan,cook on one side for 3minutes and turn over to the other side and cook 3 minutes...one minute before taking the halibut out put the fresh garlic in the pan....AFTER you take the halibut out put either warm butter or warm fresh lemon juice on the halibut...It's great...

Grilled Halibut, Marinated and Apple-Honey Glazed
This is a fantastic recipe courtesy of Bobby Flay and the Food Nework.
Glaze
2 tablespoons olive oil
1 small Spanish onion, coarsely chopped
1 tablespoon grated fresh ginger
3 cups apple cider
1 tablespoon brown sugar
1/2 cup honey
Marinade
1/2 cup olive oil
1 tablespoon fresh ground black pepper
2 cloves garlic, mashed
10 sprigs fresh marjoram
2 (6 ounce) halibut fillets
salt, to taste
2 servings Change size or US/metric
Change to: servings US Metric
2 hours 45 minutes 30 mins prep

1. Glaze: Heat oil in a medium saucepan over medium-high heat.
2. Add the onions and cook until soft.
3. Add the ginger and cook an additional minute.
4. Raise the heat to high, add the apple cider, brown sugar and honey, and reduce to 1 cup.
5. Let cool.
6. Marinade: Combine the marinade in a medium shallow baking dish.
7. (I use a Tupperware container made for a marinade where you can turn it over half-way through-- or you can use a large plastic freezer bag that you can turn over--).
8. Add halibut fillets and turn to coat.
9. Cover and refrigerate for 2 hours.
10. To Cook: Preheat grill to medium-high.
11. Remove halibut from marinade and season with salt.
12. Grill, skin side down, for 3 to 4 minutes on each side or until preferred doneness.
13. During the last 1 minute of grilling, brush the skin side with the glaze.
14. Remove from the grill and glaze each fillet again.
15. Enjoy!

Key Lime Baked Fish

1 large white fish fillet (dolphin, snapper)
Salt and pepper to taste
1 medium sweet pepper
1 large garlic clove
1 medium onion, sliced into rings
1¼ cup Nellie & Joe’s Key West Lime Juice
4 tablespoons olive oil
1 tablespoon cider vinegar
1 bay leaf
1 teaspoon oregano
Paprika
Clean and score fish. Place fish in large baking pan and sprinkle with salt and pepper. Place onion rings on top of fish. Mix together oil, vinegar and Nellie & Joe’s Key West Lime Juice and pour over all. Place bay leaf in center of fish. Lightly sprinkle oregano and paprika over surface of fish. Bake at 350º degrees.

Sautéed Tilapia with Lime

1-1 1/3 pound tilapia fillet, about ½ inch thick
3 tablespoons all-purpose flour
1 garlic clove, minced or pressed
Salt and pepper
½ cup dry white wine
1 tablespoon Nellie & Joe’s Key West Lime Juice
½ tablespoon butter
1 tablespoon olive oil
3 green onions, chopped
Rinse fish and pat dry. Put the flour on a plate and season with salt and pepper. Dredge the fillets in the flour, patting to remove excess. In a small bowl, combine garlic, wine, Nellie & Joe’s Key West Lime Juice and butter then set aside. Heat the oil in a 10 to 12-inch frying pan over medium-high heat. Add the fillets without overlapping (you may need to cook in 2 batches). Cook until golden on the bottom, about 3 minutes. Turn the fillets over and cook until opaque through the thickest part, 1-2 minutes more. Transfer the fish to a platter and keep warm (cover with foil or place in a 200º degree oven). Add the wine mixture to pan and boil, scraping up cooked bits, until reduced by half, 2-3 minutes. Stir in the onions and heat on low about 30 seconds. Pour the sauce over the fish and serve.
