Try real lemon curd Juice and zest of 4 lemons 4 egg yolks 60g butter 3/4 cup Castor sugar Whisk eggs and sugar until well combined. Place over medium heat whisk constantly and add lemon juice and zest and butter. Bring to a simmer. As soon as bubbles begin to appear remove from heat. Allow to cool. Use as pie filling, sandwich spread or whatever you like. A
