I'm looking for some Indian recipes. I'd appreciate if you could either give me your favourite recipe, or the links to your favourite sites, especially if you've tried some of their recipes.

I'm especially interested in main course, curries to serve with rice or parathas.

I usually do the same mix of ingredients: margarine, cajun seasoning (Tony Cacherie's), fresh lemon juice or bottled lemon juice, dried parsley flakes, garlic power and a few drops of green Tabasco. I melt all that in the microwave and pour the mixture on top of the fish. It gives the fish a tangy, spicy and seasoned flavor. It's probably not the healthiest recipe though, so I am looking for different ideas.

Decades ago my mother found an "old" recipe for lemons cut into wedges that were then "cured" (for lack of a better term) in a simple sugar syrup in a canning jar for some time. My mother made it and it was a delicious treat! She is now still with us, but not in a position to ask about the "curing" process (if that is what it was).

I've been told I'll soon come into a LOT of lemons - way too many to use normally, give away, or freshen my disposal. (Don't you just love family?) I want to recreate that treat when I go home for Christmas. I also want to expand on it.

Does anyone know ofany recipes sounding liek what I described?

I want to bake, from scratch, buns that, when pulled apart, are like warm, slightly chewy, fresh bread, but in a roll (bun, biscuit) form.

I am learning how to cook. However, I always manage to get overwhelmed and resort back to eating out. I have made a determination to start small as a cook and master some recipes (i.e. omelettes, fried chicken, etc). What basic dishes should I learn first?

-there's a restaurant in town that does them. However, the cheese in theirs doesn't harden when it comes out of the oven. I tried it with mozz and the cheese hardened. Any ideas on a cheese that melts nicely and stays that way- i know it was a white cheese. TIA
